That is one reason I love this recipe for these amazing air fryer egg rolls. With its use of simple ingredients, I can enjoy these egg rolls whenever I want!

Air Fryer Egg Rolls

These air fryer egg rolls are the easiest egg rolls you will ever make – which is just one of the many reasons that we love them so much! Using ingredients that you likely have already at your house, and with the addition of egg roll wrappers, this recipe is both inexpensive AND simple. And did we mention that they are absolutely delicious?

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cooked and diced small
  • ⅓ cup frozen or fresh corn
  • ⅓ cup red bell pepper, finely diced
  • ¼ cup green onion, finely sliced
  • 1 cup black beans, drained and rinsed
  • 1 cup fresh spinach, loosely packed and chopped into 1-inch pieces
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 2 cups grated cheese, Mexican blend, Monterey Jack, or Cheddar
  • 1 package egg roll wrappers

For Dipping:

  • Avocado Ranch Sauce
  • Ranch Dressing
  • Cilantro Ranch Dip

How To Make Air Fryer Egg Rolls

Air Fryer Egg Rolls

Yield: 12-14 egg rolls

Prep Time: 15 minutes

Cook Time: 8-10 minutes

  • In a large mixing bowl, combine the diced chicken, corn, black beans, red bell pepper, green onions, and spinach.
  • Stir in cheese and seasonings.
  • Lay egg roll wrapper onto working surface, brush water around the outside of the wrapper, and lay another wrapper on top to make it double thickness.
  • Scoop ⅓ cup of the chicken mixture into the center of the egg roll wrapper.
  • Brush water around the outside of the wrapper.
  • Fold up the bottom of the wrapper and then the two sides so the points almost touch. Then fold the top in and tightly roll up the egg roll and place on a sheet pan lined with wax or parchment paper. Repeat with the remainder of the chicken mixture.
  • Lightly brush each egg roll with olive oil. Place egg rolls in an air fryer and cook at 380 degrees Fahrenheit for 5 minutes. Make sure there is space between each egg roll. Cook in batches if needed.
  • Use tongs to flip the egg rolls and brush oil on the top of them. Continue cooking for 3-5 more minutes or until the exterior is golden brown and crispy.
  • Serve with your favorite dipping sauces.

Tips Tricks and FAQs

  • There’s no limit to the ways you can customize these amazing egg rolls! Go for a vegetarian roll and replace the chicken with tofu or cabbage. Or create a delicious meat-lovers version with your favorite kinds of meat! 
  • Don’t overcook the chicken! When cooking the chicken, do so only until it is fully cooked. Overcooking it in the early stages can result in dry chicken later when the egg rolls are air fried.
  • Don’t want to cook chicken? Try using a precooked rotisserie chicken! It’s just one way you can make an easy recipe even easier for those evenings when you’re pinched for time.
  • Do not undercook the egg rolls! Undercooking will result in soggy egg rolls, and nobody wants that! Be sure to cook for the full time and don’t be afraid to add some time if they aren’t looking crisp and golden!

Storage

Egg rolls are best when enjoyed immediately after cooking. If you have leftovers (you may not!), store them in an airtight container in the refrigerator for 3-4 days.
