Growing up, my mom always made the classic chocolate chip cookie. They were so chewy and delicious. In fact, they were the most requested cookie for all my friends growing up.
Her cookies could sometimes even get me out of getting in trouble for forgetting my homework!
In 7th grade, I had a teacher, Mr. Salatino. He was my math teacher and also a friend of the family. Well, as luck would have it, I forgot my homework at home one day…
Mr. Salatino decided to be funny and say, “Michele, I don’t want your mom’s chewy chocolate chip cookies, I want chewy mint chocolate chip cookies.”
I thought to myself, “Great, detention here I come!” So I went home and told my mom, “Mom, I forgot my homework and now I have to bring Mr. Salatino Chewy Mint Chocolate Chip Cookies, and I don’t even know how!”
Well, my mom looked at me and said, “Well, I guess it’s time to learn…”
So my mom showed me her secret Chocolate Chip Cookie recipe and said, “Here you go. Now create a Chewy Mint Chocolate Chip version of this!” She then said, “But don’t forget that Karo® Corn Syrup is the secret ingredient to make the best, chewiest cookie, so don’t change that!”
So I went into the kitchen so many years ago, and that is when this Chewy Mint Chocolate Chip Cookie recipe was born!
How to make a Chewy Cookie
Everyone always asked my mom, “Why are your cookies so chewy?”
The reason my mom’s cookies were always the softest, chewiest cookies growing up was that she always used Karo® Corn Syrup. There is no wonder they are the leading brand in corn syrup for over 100 years. They have been the brand my grandma trusted, my mom trusted, and now that I trust and that my kids will learn to trust, too!
Karo® Corn Syrup isn’t just for the traditional Thanksgiving Pecan pie! It literally enhances every single traditional cookie recipe when it is added, making them the best, chewiest cookies you will find. It is the perfect ingredient that makes your cookies chewy on the outside and soft and delicious in the middle.
A good rule to follow is ¾ cup of Karo® Corn Syrup for every 1 cup of sugar.
So, are you ready to make these Chewy Mint Chocolate Chip Cookies?
Chewy Mint Chocolate Chip Cookie Recipe
Prep Time: 10 minutes
Cook Time: 9-11 minutes
Makes 4 dozen cookies
Chewy Mint Chocolate Chip Ingredients
1 cup butter room temperature or melted
1 ¼ cup brown sugar
¾ Karo® Corn Syrup
2 eggs
1 tsp vanilla
¾ tsp of peppermint extract
2 ½ cups flour
2 tsp soda
½ tsp salt
1 ½ cups chocolate chips
½- ¾ cup of mint chips or mint chunks
How to Make Chewy Mint Chocolate Chip Cookies
In a small bowl, you will want to combine the flour, the soda, and the salt. Set this bowl aside until later.
Then in a large bowl, you will want to add the butter, the brown sugar, and the Karo® Corn Syrup.
You will want to beat this with your electric mixer until it is really creamy. I usually mix mine for about 4-5 minutes to make sure it is really mixed well.
After this is good and mixed, add the vanilla and the eggs. Combine this really well.
Once this is mixed, begin adding the flour mixture. You will want to add a little at a time at a low speed so the flour does not fly everywhere.
Once all the flour is combined, you will begin adding your chocolate chips and your mint chips or chunks.
I prefer to do this with a spoon rather than the mixer to make sure my chocolate chips and mint chunks do not break apart.
Once the cookies are mixed, I like to put the dough in the fridge for just a couple of minutes to harden up a bit. I feel like this helps the cookies keep their shape a little bit better when I do this.
I take these couple of minutes to put my ingredients away and prep the space for my baking sheets.
Once the dough has hardened just a little bit, get your trays out and drop rounded tablespoons of Chewy Mint Chocolate Chips on to the tray.
Bake your mint chocolate chip cookies at 350 degrees for 9-11 minutes. Let cool for 2 minutes before removing them from the tray. Let them finish cooling on wire racks.
Chewy Mint Chocolate Chip Cookies vs. Chewy Chocolate Chip Cookies
I get lots of people that ask if they can convert these chewy mint chocolate chip cookies to regular chewy chocolate chip cookies, and the answer is
YES!
You can absolutely omit the peppermint extract and the mint chips/chunks. If you decide to omit the mint and make Chewy Chocolate Chip cookies, increase the vanilla to 2 tsp and the chocolate chips to 2 cups.

Get creative when making your chewy mint chocolate chip cookies. Try adding dark chocolate chips or chunks or even white chocolate chips! The possibilities of delicious chewy cookies are endless, just as long as you are using Karo® Corn Syrup to make them soft and chewy!

Craving a chewy mint chocolate chip cookie or even a regular chocolate chip cookie? We are sharing our secret mint chocolate chip cookie recipe that is so good.
Ingredients
- 1 cup butter room Temperature / or melted

If you can’t find the chips you can get mints and chop them up. That’s what I did for these. You’ll just have to unwrap a bunch of Andes 🙂
