The Easiest Chicken Pot Pie

This amazing chicken pot pie is perfect for your next dinner. Quick to prepare and easy to make, it will have your mouth watering more with each bite!

My husband loves chicken pot pie. It is one of his favorite meals. The only problem is, I don’t LOVE making pie crusts. So I set out to create an easy chicken pot pie recipe that uses already-made pie crust. Let me tell you, this recipe is easy to make, uses premade pie crust, and tastes delicious! Some of my favorite qualities in a recipe for sure! The kids loved it too, which is a huge bonus!

Pot pies are such a great dinner option because they combine major food groups and it is so easy to alter them to fit your family. Need more meat? Try adding in some cajun-style sausage slices! Looking for something vegetarian? Replace the chicken with broccoli. There are so many ways to enjoy this amazing recipe. Not only that, but they are budget-friendly!

Chicken Pot Pie

Prep Time: 30 minutes

Bake Time: 35 minutes

Total Time: 1 hour 5 minutes

Yield: 1 9×9 inch pie dish

Servings: 8 slices

Ingredients

  • 2 Tbsp olive oil
  • 4 cups diced rotisserie chicken
  • ½ cup diced onion
  • ½ cup diced celery
  • ¼ cup scallions or green onions
  • 1 diced bell pepper (any color)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried fennel
  • ½ tsp dried thyme
  • ½ tsp herbs de province or Italian seasoning
  • 1 Tbsp chicken bouillon
  • ½ cup all purpose flour
  • 2 cups water
  • 1 cup heavy cream
  • 1-16oz bag frozen veggies
  • 2 Pillsbury Pie Crust (1 pkg contains two)

How to Make Chicken Pot Pie

  • Preheat the oven to 350 degrees Fahrenheit.
  • Place one pie crust into a deep pie tin and bake for 7 minutes. Remove and set aside.
  • Heat olive oil in Dutch oven on medium high heat.
  • Add onions, scallions, celery, and bell pepper and cook until translucent.
  • Add in the diced chicken, flour, and dry herbs and seasonings and cook for 2-3 minutes.
  • Add water and cream and bring to a boil.
  • Add frozen veggies.
  • The filling will begin to thicken as the temperature rises. Make sure to constantly stir the mixture to avoid burning. 
  • Cook the filling for 10-15 minutes or until very thick. Pour into prepared pie dish.
  • Place the second pie crust on top and cut slits in the top to vent.
  • Use a fork to crimp the edges all around the pot pie.
  • Mix 1 egg and 1 tsp water together.
  • Brush egg wash over the whole pie crust.
  • Bake for 30-35 minutes or until golden brown.

Tips Tricks and FAQs

  • For extra flavor in this dish, add 1 Tablespoon of butter with the olive oil when you saute the onions, scallions, and celery. This simple trick will really elevate the flavors in this already amazing dish!
  • For less of an onion flavor, take out the scallions!
  • Mix it up with the veggies! Try adding asparagus pieces or broccoli or really any other favorite vegetables. There is no limit to the amount of variation to this recipe. 
  • I love using the frozen vegetable mixes with peas, carrots, beans, and corn! These work for a more classic chicken pot pie. Feel free to use whatever frozen veggies your family will love! 

Storage

Cover leftovers with aluminum foil or plastic wrap and keep in the fridge. When stored correctly, this pot pie should keep for 3-5 days!
