I’m a sucker for a good soup! I mean I swear I think I could eat it every single day, especially when it is cold! I also love Panera Bread, but I find it to be a little pricey especially to take the whole family. So, I wanted to figure out how to make Panera Broccoli Cheddar Soup Bread Bowls a staple in our winter dinner recipes for a quarter of the cost! After lots of trial and error, I have come up with the best Copycat Panera Broccoli Cheddar soup that my family loves to eat!I love winter becuase I love soup! Copycat Panera Broccoli Cheddar Soup Ingredients

I love this Copycat Panera Broccoli Cheddar soup because of the fact that I usually have all the ingredients on hand for it! So that way if I need a quick weeknight dinner I just pull out the ingredients and start cooking!

You will need:

  • 1 1/2 Tablespoons of melted butter
  • 1 Medium yellow onion, chopped
  • 1/4 cup of butter
  • 1/4 cup of flour
  • 2 cups of half and half
  • 2 cups of chicken broth
  • 1 1/2 cups of broccoli (fresh or frozen, I always use frozen so that I can always have it on hand), chopped in small bite-sized soup pieces
  • 3/4 cup of carrots, grated
  • 8 ounces of cheddar cheese (I use medium, but sharp can be used as well)
  • Salt and Pepper to taste

Instructions for making Copycat Panera Broccoli Cheese Soup

  1. First, you want to saute the onion. Melt 1 1/2 Tablespoons butter in a pan and then throw the chopped onion in there. Cook until tender. Set aside when done.I love winter becuase I love soup!   2. In a large pot, (I love this one for soup) mix 1/4 cup of butter and flour together on medium heat. This is the perfect whisk to really get them to mix well together! This will cook for about 3 minutes.
  3. Once this becomes a roux, then slowly add the chicken broth and half and half and whisk. Let this cook on medium-low heat at a simmer for around 15 minutes or so. Be sure to whisk on occasion so your soup does not burn on the bottom.
  4. Next, add the broccoli, the carrots, and the sauteed onion to your soup. You will want this to simmer for about 15 minutes, stirring on occasion so it doesn’t stick to the bottom of the pot.   5. Add salt pepper and cheese. Let the cheese melt and mix together. Serve in bowls or bread bowls sprinkled with a little cheese on top if desired!
