My kids have been requesting hot breakfast lately instead of their typical bowl of cereal, and I can’t really blame them because it’s been pretty cold over here in Texas.

Along with my favorite from-scratch pancakes and delicious eggnog waffles, this easy quiche florentine recipe is one of my go-to breakfasts because it’s super easy to make and I always have the ingredients on hand.

I also love that it’s healthy and filling!

Quiche Florentine isn’t just good for a quick breakfast before school though. It’s also a fantastic way to feed a crowd. I really enjoy cooking this up for guests that stay over at our home as well. 

There are always rave reviews and lots of requests for more of this spinach quiche recipe. So that’s why I wanted to make sure I shared so we can all relish in the love for healthy delicious and easy Florentine Quiche!

What does Florentine mean?

Florentine refers to a recipe that is prepared in the style similar to those made in the region of Florence, Italy.

However, when you see a recipe advertised as Florentine or Florentine-style, it means that the recipe features spinach.

Easy Quiche Florentine Recipe

  • 1 9-inch prepared pie crust (uncooked)
  • 3 eggs
  • 1 1/2 cup whole milk
  • 2 cloves garlic, minced
  • 1 cup chopped mushrooms
  • ½ cup chopped sweet onion, minced
  • 2-3 cups fresh spinach, chopped small 
  • 4 ounces feta cheese
  • 1 cup shredded swiss

How to Make this Quiche Florentine Recipe- Easy Steps to Follow. 

Preparing this quiche florentine recipe is easy and just requires a few basic steps!

First, preheat the oven to 400 degrees. Line an ungreased 9-inch pie pan with your uncooked pie crust. Flute the edges and set aside.

In a small bowl, whisk together the eggs, milk, and minced garlic. Set aside.

Next, in a large bowl, stir together the mushrooms, onions, spinach, and feta cheese until well mixed.

Fill the pie crust with the spinach mixture. 

Then, pour the egg mixture over the top of the spinach mixture. Use a spoon to press the mixture down until the egg mixture covers most of the spinach mixture.

Finally, top with shredded swiss cheese.

Cover with aluminum foil and bake for 40 minutes.

Remove the foil and bake for an additional 20 minutes, or until the crust is light golden brown and you can insert a knife in the center and it comes out clean.

Tips and Tricks for Spinach Quiche

  1. If you look at a Classic Quiche Ratio you would see that for each egg used, you should add enough whole milk to make a full ½ cup. To simplify it even more, it’s basically a 1:2 ratio egg: milk. So, for a standard 9-inch pie pan, 3 eggs, and 1 ½ cup liquid is perfect!
  2. Whole milk is my recommendation for this florentine quiche recipe. Classic recipes use a combination of whole milk and ½ cup of heavy cream. Using a heavy cream makes the quiche a little more firm, so using whole milk makes it a bit less tough. 
  3. There is a lot of flexibility with the spinach amount in this easy quiche florentine. So you can adjust the amount of spinach according to your pie pan size. 
  4. It’s not necessary to cook your veggies ahead of time for this recipe. 
  5. You can mix the eggs and veggies together in a large bowl if it makes it easier. The pour-over method is the best way to work with the fresh spinach so you have that gorgeous spinach layering look when it’s cut.

How can you tell when quiche is done?

If the quiche jiggles or appears loose upon removal from the oven, it’s probably not done. The best way to tell if it is done is to insert a toothpick or a knife in the center of the quiche, press it all the way down to the bottom crust. When you pull it out it should be clean. If stuff still sticks to it, you can probably leave it in the oven for a few more minutes.

Does Florentine Quiche rise when cooking?

The egg in this recipe will make it rise and the crust will probably grow a little while baking as well. In order to prevent overspill, make sure you use a 9-inch pie pan. Don’t fill the pan up to the top, or it will spill over. If you want your quiche to be extra full, you can always just put another pan under your pie pan so your oven doesn’t get messy. 

What if I have extra egg mixture for my spinach florentine quiche that doesn’t fit in the pan?

Extra eggs? No problem! If you are trying to make sure your quiche isn’t overflowing you might end up with extra egg mixture. If this is the case, you can make mini egg cups in a muffin pan or you can scramble them up and serve them on the side!

Can this be made ahead of time?

You can totally make your florentine ahead of time. A good rule to go by is to bake and completely cool your quiche up to 3 days prior to when you want to serve it. Make sure to cover it completely and put it in the refrigerator.

To reheat it, cover it with foil and bake it at 325 degrees for about 15 to 20 minutes. You just want to keep in the oven long enough to be warmed through.
