I love soups, especially in the wintertime. Some of my favorites are chicken corn chowder soup and broccoli cheddar soup. But every now and again I like to make a super healthy soup, especially after the holidays that are not loaded with creams and cheeses.

This easy vegetarian cabbage soup does just that, paired with our delicious homemade garlic parmesan rolls! Packed with vegetables and flavor this cabbage soup is perfect to adapt to your liking by adding different vegetables, seasoning, and spices to give it just the flavor you are looking for!

2 Tablespoons Olive Oil

1 small sweet onion, chopped

3 cloves garlic, minced

8 cups low sodium vegetable broth

1 teaspoon salt

½ teaspoon pepper

½ head of a small cabbage, chopped

3 carrots, peeled and sliced

3 celery stalks, sliced

1 14.5 ounce can of seasoned stewed tomatoes

How to make Cabbage Soup

 

First, in a large soup pot, you will want to heat up your olive oil over medium-high heat.

Once hot, cook the onions until they are tender and transparent.

Add your garlic and continue cooking for about another minute or so.

Next, add your broth, salt, pepper, cabbage, carrots, celery, and stewed tomatoes.

You will want to bring this mixture to a boil.

  2. Sauteeing the onions ahead of time really takes the flavor of the soup up a notch, don’t skip this step!

I love adding all kinds of different vegetables like kale, peppers, and corn to my soup. I even love to add potatoes if I want it to be a bit more hearty.

If you are going to add kale and other leafy vegetables, add them just a couple minutes before you serve it… If you add them much sooner they will become quite mushy.

Add Meat!

Although this is a vegetarian cabbage soup recipe, if you are craving some meat, you can absolutely add it!

If you want to add sausage to your cabbage soup, you will want to cut up 1-2 Kielbasa in ½ inch slices and cook with your onions.

You can also use hamburger in your cabbage soup to make cabbage soup with hamburger. Add your hamburger meat when you cook your onion. Cook the meat until it is no longer pink and continue the recipe as written.

To make cabbage soup with chicken add 1-2 cups of cooked chicken that is either cut, chopped, or shredded and add it at the end and warm. I love using the Costco rotisserie chickens for this.
