Funfetti Cake Mix Cookies Recipe

If you know our family, you know that my kids love to help out in the kitchen. So I’m always on the lookout for simple quick recipes that can entertain little ones without making too much of a mess because goodness knows that us moms already have enough messes to clean up around the house during the day! Keeping the house tidy is no easy feat, that’s for sure.

My kids especially like to bake cookies! Some of our favorites are copycat Swig cookies, mint chocolate chip cookies, cookies without baking soda, and strawberry cheesecake cookies. Trust me, all of these are favorites because they are so good! You definitely won’t regret trying them.

We really love funfetti cake mix cookies at our house mostly because we always have the ingredients and they are just as good as a cake without all the extra mess and work! 

Always remember, sprinkles make everything better! The more the merrier!

Ingredients for Funfetti Cake Mix Cookies 

1 box funfetti cake mix, 15.25-ounce

⅓ cup vegetable oil

2 eggs

How to Make this Funfetti Cake Mix Cookies Recipe

Cake mix cookies are not only easy, but they are also so yummy! They have a super soft texture that makes them extra irresistible, and can be ready in less than a half-hour!

The first thing that you need to do is preheat your oven to 350 and prepare your baking sheets. You can place a piece of parchment paper on two sheets, or you can use Silicone mats like these to save you the paper and the hassle!

Once this is done you can set your cookie sheets aside and get started on the dough of your funfetti cake mix cookies! 

In a large bowl, add the cake mix, oil, and eggs. Mix at a low speed with an electric mixer, or mix in the bowl of your stand mixer, for 1-2 minutes or until thoroughly combined. 

Can you believe you have cookie dough ready in 2 minutes?? 

Next, you’ll want to grab your prepared cookie sheets and start scooping your dough. I like to use my OXO cookie scoop because it makes this part so easy and helps my cookies to be even and lovely!

Once all of your cookie dough is scooped, put the cookies in the preheated oven and bake for 8-10 minutes. They should be golden on the edges and cracking on top. 

Let cool for a couple minutes on the cookie sheet, then transfer to a cooling rack until you are ready to serve. 

 

Tips and Tricks for Funfetti Cake Mix Cookies

  1. These cookies are super soft! The cake mix gives them a softer texture than your usual cookies. You may want to leave them on the cookie sheet for a few minutes before trying to move them to avoid any of them crumbling!
  2. Try adding frosting to these cookies! You could go for the funfetti frosting that you find in the store, or these would be delicious with a simple buttercream made at home. For an easy buttercream whip up 1 cup of salted room-temperature butter and sift in 3 cups of powdered sugar and a tsp of vanilla. Beat until creamy. Top with sprinkles for extra fun!
  3. You can use whatever cake mix that you like best, but I always use Pillsbury Funfetti Cake Mix for this recipe. It’s a personal favorite for cakes and for these cookies! If you have another cake mix you love, feel free to use it with this recipe!
  4. Don’t let your cookies overcook! The key to the perfect moist cookie is actually slightly undercooking them! I’m not saying you should be serving raw cookies, but when you take them out they will continue to bake on the tray for a few minutes and you want to make sure they don’t get dried out in the process. 

 

Do I really need a cookie scoop for these cookies? 

My answer has to be yes!

I know it just seems like another kitchen gadget, but I absolutely love having my cookie scoop. It makes things so much easier when scooping cookies. It also helps my cookies look uniform which is great when I’m serving guests. 

You can also use these scoops to evenly portion other foods and batters like cupcakes, pie fillings, or even mashed potatoes! 

How should I store Funfetti Cake Mix Cookies? 

Your best bet is to store these cookies in an airtight container, or a cookie jar if you have one. 

They are so soft, you want to keep all the air out to allow that moisture to stay inside the cookies where it belongs! 

You can always add a piece of bread to your jar of cookies to keep them extra moist. The sponge-like texture of the bread helps draw more moisture into the cookies. 

Can I use other flavors of cake mix in this recipe?

The great thing about this recipe is that it’s almost universal! 

You can change these cookies to any flavor with the simple substitution of the cake mix flavor. I especially love strawberry cake mix and carrot cake mix, but any mix would be great!

You can also spice this cookie recipe up with mix-ins really easily. Add some chocolate chips, nuts, sprinkles, dried fruits, or anything else that you think will pair well with your chosen flavor.

Can I freeze this cookie dough?

I know these cookies are so delicious you are going to want to have them ready all the time, but I would suggest skipping the freezing because they only take a few minutes to whip up!

The dough should freeze okay. If you try it let us know in the comments how it goes! But an easier option to have these cookies available all the time is to make sure you keep a cake mix or two in your pantry! 

It’ll be faster to mix up a quick batch than it would be to pull the dough out of the freezer to thaw!
