I try to rotate between shaved brussel sprout salad and kale and quinoa salad too. Throwing a colorful salad together is always a great main dish too if you simply add a protein like grilled chicken or grilled shrimp. Garden salad always comes through for me in a pinch!

And we all know the very best part of the salad (besides the homemade croutons) is the dressing. Am I right? My homemade honey mustard dressing is my absolute favorite dressing to whip up! But ranch also takes a close second.

Ingredients for Garden Salad 

For Salad

6 Cups Salad Greens and herbs (Romaine, Iceberg, Leaf Lettuce, parsley) chopped into bite-sized pieces

3 radishes, thinly sliced and halved

2 small carrots, thinly sliced 

2 small salad cucumbers, thinly sliced

4 Campari tomatoes, quartered

¼ cup red onion, thinly sliced

Dressing of your choice

For Croutons

5 cups crusty bread, chopped into ½ inch cubes

½ cup extra virgin olive oil

1 Tablespoon dried italian seasoning

1 teaspoon garlic powder

½ teaspoon salt

1/4 teaspoon pepper

1 Tablespoon fresh parsley, chopped

How to Make this Garden Salad Recipe

This garden salad with homemade croutons is going to be a showstopper, and it’s ready in only 20 minutes! 

The first step is to make the croutons. Start by preheating the oven to 375 degrees and preparing a sheet tray with non-stick spray. 

In a large bowl, combine the bread cubes and olive oil until the bread is completely coated. Stir in the Italian seasoning, garlic powder, salt, and pepper until combined. 

Next, you will spread the bread mixture on the tray evenly and bake for 5 minutes. Use a spatula to flip the croutons and bake for another 5 minutes. When golden and crunchy, remove from the oven and immediately sprinkle on the fresh parsley. Set aside until your salad is prepared. 

To make your salad, it’s as simple as it can get! Just grab a large serving bowl and mix together all your salad ingredients until combined. Add in your dressing and stir once more before topping your garden salad with homemade croutons. 

Tips and tricks for Garden Salad with Homemade Croutons

  1. You can always choose to serve your salad undressed! Especially if you are making your salad ahead of time, you can choose to leave it undressed and either dress right before you serve, or allow your guests to dress the salad themselves. Can I store any leftovers from this garden salad? 

Salads can be a little bit tricky to keep after serving them. If you have dressed it and tossed in croutons, it will probably not have a long life in your fridge. 

If you know that you are going to have leftovers that you want to save, save the dressing for individual servings! An undressed salad has way more potential of lasting for a couple of days in the fridge. 

The croutons, however, have a pretty good shelf life if kept in an air-tight container. They should last a week on the counter, or a month if frozen. To thaw your croutons, bake them again to heat through. 

Does it matter what greens I have in my garden salad!

Yes and no. It definitely matters what greens you choose, because a variety of flavors and textures in the greens make for a really great salad. You also don’t want to forget to include some fresh herbs as well.

That being said, you don’t have to use exactly the greens that I listed! Get creative. Just make sure you include some variety in flavor, texture, and color!

  4. Spread the breadcrumbs out evenly on the prepared baking sheet. 
  5. Bake for 5 minutes, then use a spatula to stir and flip cubes. Bake an additional 5 minutes or until the cubes become crispy. 
  6. Sprinkle fresh parsley on the croutons immediately after removing from the oven and stir.
