How to Make this Hot Chocolate Cookies Recipe

  • The first step in making hot chocolate cookies is preheating your oven to 350 degrees.
  • You’ll also want to get your baking sheet ready by lining it with a silicone mat or parchment paper.
  • To make your dough, add your flour, baking powder, salt, and hot chocolate mix to a medium-sized mixing bowl.
  • In a separate large-sized bowl, cream together the butter and brown sugar with an electric mixer for a few minutes until the mixture is smooth and creamy.
  • Add the eggs one at a time, mixing after each addition.
  • Add the vanilla and give the mixture another good mix until it’s well combined.
  • Slowly add the dry ingredients and fold them in until just combined.
  • Stir in the chocolate chips and marshmallow bits and your dough is ready to go!
  • To make your cookies, use a small cookie dough scoop to scoop your cookies a few inches apart on the prepared baking sheet.
  • Bake the cookies for about 8-10 minutes or until the edges just start to darken.

Tips Tricks and FAQs

  • You can use whatever chocolate chips that you like for this recipe. Milk chocolate and semi-sweet chocolate always work great and you can even do a mix of both if you can’t decide! For a real holiday feel, try using peppermint chips!
  • If you can’t find marshmallow bits in your local grocery store, you can always find them online. They are a must for this recipe and they’re also great for adding straight into your hot chocolate mix before storing! You won’t regret having a big bag of them in your pantry.

How do you know if your hot cocoa cookies are ready to take out of the oven?

It’s tricky to know if cookies are ready when they have cocoa powder in them because you can’t look for that golden brown color.

I always look at the edges of the cookies to see if they are starting to firm up. You can also touch the top of one of your cookies to see if it’s still too soft to take out!

When in doubt, it’s always a good idea to err on the side of the under-done because they can always continue cooking on the tray outside the oven for a few minutes!

Storage

These cookies can be stored in an airtight container at room temperature for 3-4 days.

Freezer

These cookies come out great from the freezer. The fully baked cookies will last 4-5 months in a freezer-safe airtight container.

When I freeze these cookies I usually freeze the dough balls prior to cooking. Instead of baking them, I freeze them on a cookie sheet and then add them to a freezer-safe bag once they are frozen solid.

When I’m craving some of these yummy cookies I’ll pull out some of the dough balls and let them sit on the tray for 20 minutes before baking as normal.
