It’s almost a tradition in my family that as soon as we see even a hint of warmer weather my kids start begging for ice cream sandwiches. These aren’t just any ice cream sandwiches either! They’re the best!

My homemade ice cream sandwiches are simply amazing. I bake the yummiest cookies loaded with chocolate chips and I fill them up with vanilla ice cream. 

The great thing about ice cream sandwiches is that you can store them so easily! I like making a big batch of these to store in my freezer so I can pull them out a few at a time as we need a sweet cold treat.

I mean, is there anything better than cookies and ice cream?!

Cookie Ice Cream Sandwich Recipe

Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 2 large eggs, room temperature
  • 2 ½ cups all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 12 ounces chocolate chips, semi-sweet or milk chocolate
  • ½ gallon vanilla ice cream
  • Mini chocolate chips, optional
  • Sprinkles, optional

How to Make Ice Cream Sandwiches

  • Here’s how to make cookie ice cream sandwiches. First, preheat your oven to 350 degrees and line your baking sheets with parchment paper.
  • In a medium-sized mixing bowl, add the flour, baking soda, and salt. 
  • Whisk the ingredients together until they’re well combined and free of clumps.
  • In a separate mixing bowl, cream together the butter, granulated sugar, and brown sugar. 
  • Add the eggs and vanilla to the sugar mixture and beat again until well combined. 
  • Add the dry ingredients a little at a time, mixing just until the dough comes together. Be careful not to overmix your dough!
  • Fold in the chocolate chips until they’re well incorporated. 
  • Use a cookie scoop to scoop cookies onto the prepared baking sheet about 2 inches apart.
  • Bake the cookies for 10-12 minutes or until they have just started to turn golden brown. 
  • When the cookies are baked, place them on a wire rack to cool. 
  • When the cookies are completely cool and you are ready to assemble your ice cream sandwiches, take your ice cream out of the freezer to soften. 
  • Scoop your desired amount of ice cream on a cookie and spread it a bit to even it out.
  • Place another cookie on top and press the cookie ice cream sandwich together gently.
  • If desired, dip the edges of the ice cream in sprinkles or mini chocolate chips.
  • Place the finished sandwich on the baking sheet and repeat with the remaining cookies.
  • Place the ice cream sandwiches in the freezer until you’re ready to serve.

Tips Tricks and FAQs 

  • If you don’t want to leave your eggs on the counter, you can also bring them to room temperature by placing them in warm water. Just put the eggs in a small bowl and cover them with warm water. In about 5-10 minutes the eggs should come to room temperature safely. 
  • Make sure that you don’t over-bake your cookies. Just as they start to turn golden you’ll want to take them out so they’re perfectly soft for the ice cream sandwiches. I often err on the side of underbaking and let them continue cooking on the baking sheet for a minute or two after I pull them out of the oven. 
  • Want to kick it up a notch? Try serving these up with my homemade chocolate sauce or caramel sauce for dipping. It takes these cookie ice cream sandwiches to the next level!

Storage

You should store your ice cream sandwiches in the freezer and make sure they’re sealed up tight! 

I usually wrap them up in plastic wrap individually and then place the wrapped cookie ice cream sandwiches in some large freezer bags to keep them fresh. 

They should stay fresh for about 4 months!
