By now you might know my love for my Instant Pot. From cooking delicious Instant pot asparagus to full-blown Instant Pot dinners, it is my go-to way to cook for our busy family!

My most recent love for my Instant pot is Instant Pot cheesecakes! And man have we made some delicious ones! From our Instant Pot Funfetti cheesecake to our Instant Pot Creme Brulee cheesecake they have all turned out amazing!

Cooking a cheesecake in the Instant Pot is so easy and is pretty much failproof if you follow some basic Instant Pot Cheesecake tips which I am sharing with all of you today so that you can make a perfect Instant Pot Cheesecake every single time!

How to prevent a soggy crust

Have you attempted a cheesecake in the Instant Pot only to come away with a soggy crust that you just don’t love?

The best part about cheesecake (to me at least) is the crispy crust with the creamy middle. To make this happen with an Instant Pot Cheesecake is to actually precook the crust. You will want to make your Instant Pot Cheesecake crust and then you will want to bake it in the oven for about 12 minutes at 325 degrees.

Once cooked, let it sit for a minute. By doing this, you will have the perfect cheesecake crust even with cooking it in the Instant Pot.

Room Temperature Matters

 

 

For so many years, I laughed at the line when it says, “Butter at room temperature”, but really let your ingredients sit out and become room temperature.

By allowing your cheesecake ingredients to become room temperature it really helps with the mixing. They become smooth and mix so well which helps prevent overmixing of the cheesecakes.

Make your Cream Cheese Smooth

 

 

One of the best Instant pot hacks is to make your cream cheese really smooth before mixing in other ingredients.

You can mix your cream cheese for as long as you want before adding other ingredients to make it so smooth.

I usually let it mix while I am making the crust (about 5 minutes) to make sure it is nice and smooth.

Measurements Matter

When making your Instant Pot cheesecake your measurements really do matter. You want to make sure that you measure correctly to ensure that your cheesecake sets up correctly.

Fold in the Eggs

 

 

My secret Instant Pot tip is to fold in the eggs. This helps reduce the mixing and does not alter the batter to ensure a perfect cheesecake.

Fold just to combine. That’s it! So often people overmix at this step.

Use the Right Equipment

 

 

Using the right equipment helps so much! Grab an instant pot springform pan as well as a silicone trivet. This helps you lift out the cheesecake so much easier once it is done cooking.

Wrap Completly in Foil

It is so important when making your cheesecake in the Instant pot to completely cover it in foil. This helps it to cook correctly while keeping the moisture out. Don’t forget to do this step.

1 Cup of Water

Yep! No matter what you hear, while making Instant Pot cheesecakes you just need one cup of water. Nothing more, nothing less.

Natural Release

Once your cheesecake has cooked, you will want to do a natural release for at least 15 minutes on your pot. Sometimes I let my cheesecakes sit in there for an hour at times to let it cool down on its own.

When you pull out your cheesecake you will notice it will be a little wiggly. This is okay. If any water got on the top, dab it off with a paper towel and then let it sit and cool at room temperature for at least 4 hours.

Don’t Rush

 

 

Don’t rush perfection when it comes to cheesecakes! Let your cheesecake cool in the fridge overnight before enjoying it. I know that you will want to eat is ASAP, but the cooling time helps your cheesecake to set up and have the flavors meld together!

Worried about cracking or imperfections?

 

 

The most common instant pot cheesecake complaint is your cheesecake sticking to the foil causing a small imperfection (which only you will probably notice), but if this drives you crazy you can do a couple of things.

This first Instant pot cheesecake hack you can do is not fill your springform pan quite as full, that way it does not rise up and touch the aluminum foil.

Or

What I like to do, is take your homemade whipping cream and place a small layer on the Instant Pot cheesecake. This helps smooth it out and gives it a really nice base for decorating your cheesecake.

Get creative when decorating. Maybe use a peanut butter whipped cream or a layer of ganache on the top or just sprinkles! There is no wrong way to decorate a cheesecake!
