I have found a whole new way to enjoy the best keto ice cream… making keto friendly ice cream bites! 

Ice cream bites are so quick and easy. All you need to do is form your ice cream and coat it in chocolate. That’s it! It only takes a few minutes of time and they are so delicious! I can never decide between grabbing one of these or a Keto oreo!

And when you use keto-friendly ice cream, these bites are only about 5 grams of carbs each. So you can have 1 or 2 to satisfy your sweet tooth without feeling any guilt!

Make a big batch to keep in your freezer because you won’t be able to resist these ice cream bites!

The Best Keto Ice Cream Bites

These keto friendly ice cream bites are amazingly delicious without all the carbs! You’ll definitely want to have these in your freezer.

Ingredients

  • 1 ½ cups keto ice cream 
  • 4 ounces sugar-free dark chocolate
  • 2 tbsp coconut oil

How to Make Keto Friendly Ice Cream Bites

  • To make these keto friendly ice cream bites, start by taking your ice cream out and letting it sit until it’s slightly melted and soft enough to form.
  • Stir the ice cream and begin scooping it into a silicone mold, making sure it’s packed well in the mold.
  • Fill all the cavities in the mold and scrape the top to make sure it’s even.
  • Place the mold on a baking sheet and put it in the freezer for at least 1 hour.
  • While the ice cream sets, melt your chocolate by placing it in a microwave-safe bowl with the coconut oil and microwaving it for 30-second increments. Stir after each time. 
  • Continue to heat and stir your chocolate until it’s completely melted and smooth.
  • Remove the ice cream from the freezer and quickly pop each bite out of the mold. 
  • Dip each bite into the melted chocolate, coating it completely, and let any excess chocolate drip off. 
  • Place the chocolate-coated ice cream back on the baking sheet.
  • Repeat with the remaining ice cream bites and place the tray back in the freezer for about 15-20 minutes so the ice cream can set.
  • When all the bites are coated and set, they are ready to enjoy or store!

Tips Tricks and FAQs 

  • You don’t want your ice cream to be all the way melted, but it does need to be soft enough to form. I usually scoop out the amount I need into a bowl and let it sit for about 10-15 minutes on the countertop. Once it sits for long enough, give it a stir and it should be perfect to spoon into the molds. If you aren’t using the whole container of ice cream, you’ll want to make sure that you scoop out what you need and place the rest back in the freezer. 
  • Work as quickly as you can when you are dipping the ice cream in the chocolate because you don’t want your keto friendly ice cream bites to start melting. If you notice they are getting too melted, just pop the mold back in the freezer for 10 minutes to firm them back up before coating them. 
  • The thing that makes these the best keto ice cream bites is that you can make them quick as a treat or dress them up! Girls night would be even better if you made a batch of these with a swirl of white chocolate or some sprinkles on top. 

Storage

To store these keto friendly ice cream bites, place them in an airtight container in the freezer for up to 4 months. I like to place a piece of parchment between layers of bites to separate them. 

Can I use a different kind of chocolate?

There are plenty of chocolates that you can use to make ice cream bites. You can use white, milk, or dark chocolate, and the oil will help just about any type melt pretty smoothly. 

You’ll just want to be aware of the nutrition information if you are trying to keep these keto friendly!
