Can we all agree that Girl Scout Cookie season is the best time of the year?! And after I discovered these amazing Thin Mint cookie truffles, I have to stop myself from buying out the whole cookie stand!

I’ve been on a serious thin mint kick lately, so I’ve been putting them in everything! My Tasty Thin Mint Donuts were a huge hit, and these mint truffles are just as yummy!

I mean, nothing is better than the creamy chocolatey taste of truffles! And when they’re made with thin mints? WOW! 

What I love most about truffles is that they are so simple! They are almost mindless so I usually turn on my favorite movie or podcast and just sit there rolling truffles. 

And when it’s time to decorate, I’m sure your little kids helpers won’t mind adding some sprinkles with you! It’s a recipe everyone will love making and eating!

Chocolate Mint Truffles

Ingredients

  • 1 15 oz package mint cookies
  • 1 8 oz package cream cheese, softened
  • 1 ½ cups almond bark, melted
  • Green sprinkles, optional
  • Green candy melts, optional

How to Make Mint Truffles

  • The first step of making your truffles is blending up your cookies until they’re super fine. The best way to do this is with a food processor. Place the cookies in the food processor and pulse until fine.
  • In a large mixing bowl, add the cookie crumbs and the cream cheese. 
  • Beat them together until the mixture is well combined and smooth.
  • Line a cookie sheet with parchment.
  • Use a cookie scoop to scoop balls of the truffle mixture into your hands and roll them into balls. 
  • Place the balls on the prepared tray and put them in the freezer for about 30 minutes. 
  • In a microwave-safe bowl, melt the almond bark according to the package directions until smooth.
  • Take the truffles out of the freezer and use a fork to pick each up and dip it in the almond bark before returning it to the parchment sheet. Make sure you wipe off any excess chocolate.
  • Repeat with the remaining truffles and place them in the fridge for 10 minutes to set.
  • If you choose to decorate them, add sprinkles before the chocolate sets or add a drizzle of candy melts after the chocolate sets.

Tips Tricks and FAQs 

  • If you don’t have a food processor, you can put the cookies in a bag and smash them with a rolling pin. It might take a little bit longer to get them nice and fine, but it’ll work just as well in a pinch!
  • Don’t forget to pull out your cream cheese a few hours beforehand so that it’s nice and soft! It’ll make mixing so much easier and help everything come together smoothly. 
  • For perfectly round truffles, here’s a little trick I always use. Since the truffles are always so sticky it can be hard to roll them into a nice ball shape. Try putting your tray of truffles in the fridge for a half-hour to firm up a bit before rolling them into balls. Then you can freeze them as the recipe says and you’ll end up with perfect-looking truffles. 

Storage

Store the Truffles in the fridge in an airtight container for up to 5 days. You can also freeze these truffles for up to 4 months and they come out great!

Can I Use Any Other Cookies for Truffles? 

The great thing about this recipe is that you can use it for just about any cookie that can be finely ground!

My classic truffle recipe is using chocolate Oreo cookies, but you could also use vanilla Oreo’s, graham crackers, or even Biscoff cookies.
