Ingredients for Pumpkin Bread:

2 teaspoons baking soda

3 ¼ cups flour

1 teaspoon salt

2 cups pumpkin

3 cups sugar

4 eggs

1 cup cooking oil

2 teaspoons cinnamon

Directions for Easy Pumpkin Bread:

First you will want to preheat your oven to 350 degrees. Then grease your two loaf pans with cooking spray or butter and flour. Be sure to get all the corners and creases so your bread doesn’t stick.

Next in a large bowl, sift the flour, salt, and baking soda together and set aside.

In another large bowl, combine the pumpkin, sugar, eggs, oil, and cinnamon with an electric mixer on medium-low speed until smooth.

You will then want to add the dry ingredient mixture little by little until a thick batter is formed. If you would like to add nuts, chocolate chips, etc. now is the time to add them and gently fold them in.

Then you will want to pour the pumpkin bread batter into the two loaf pans. You want to make sure that you divide it equally so that it cooks the same. Sometimes I will pull out my kitchen scale really quick just to make sure that it is pretty close!

Place the pumpkin bread in the oven and bake for 45-60 minutes. If you are worried about the pumpkin bread getting too dark, you can loosely cover it with foil. You will know it is done when the sides of the bread begin to pull away from the pan. When this happens, insert a toothpick into the center to see if it comes out clean (or with just a couple of crumbs) when it does, then your pumpkin bread is done.

Place your pumpkin bread on a wire rack to cool and then flip it to remove it from the pan. Give it a few gentle taps on the bottom to release it.

  1. If desired, you can add nuts after step 3. Be sure to fold them in with a spoon, rather than mixing so the dough does not get too firm.
  2. You can add more or less cinnamon to taste.
  3. To prevent the bread from getting too dark on top, you can cover loosely with foil.

What can I add to my pumpkin bread?

My two favorite things to add are nuts or chocolate chips. You can’t go wrong with either one of these, but get creative and add other things if your heart desires. Let us know in the comments what you add to your pumpkin bread and how it tastes!

How do you know when pumpkin bread is done?

There are a few signs that you can look for to know that your pumpkin bread is done. The first is to see if the edges of your easy pumpkin bread are pulling away from the sides of the pan. If they are this is a sign your bread is done or almost done.

At that point, insert a toothpick into the middle of your moist pumpkin bread, if it comes out with just a couple of crumbs on the toothpick you will know that the pumpkin bread is done. If it still moist or has several crumbs wait a few minutes and test it again.

Why did my pumpkin bread fall?

There could be a variety of reasons why your pumpkin bread falls. We have to remember that all bread deflates a little bit after coming out of the oven. Although, sometimes your pumpkin bread falls because it has too much moisture or is undercooked.

Can you fix undercooked pumpkin bread?

We have all been there! We pull out our “easy pumpkin bread” out of the oven and cut into it only to find that it is undercooked.

You can fix your undercooked pumpkin bread by returning it back into the pan and heating the oven to 350 degrees Fahrenheit. You will then want to bake your moist pumpkin bread for about 10-15 more minutes. This should fix your undercooked pumpkin bread even if it is cooled.

Be sure to test it with a toothpick before pulling it out again. If your pumpkin bread sticks to it, then cook for a few more minutes and test it again.

How do you keep pumpkin bread moist?

After baking your moist pumpkin bread you want to keep it moist, so once it has cooled wrap your pumpkin bread in plastic wrap, then place it in a Ziploc bag and get as much air out as you can.

Your pumpkin bread should stay moist on the counter at room temperature for about two days. You will want to keep it wrapped when you are not sliding it or it will dry out very quickly.

How long does pumpkin bread last?

Pumpkin bread can last for 2-3 days on the counter at room temperature if you wrap it and keep the air out. If you want it to last longer you can wrap it and place it in the fridge. Pumpkin bread in the fridge can last up to a week.

How do you freeze pumpkin bread?

The absolute best way to freeze pumpkin bread is to wrap it tightly in plastic wrap. I then like to wrap it in aluminum foil and then I place it in a Ziploc bag and get as much air out of the bag as I can. Getting all the air out is the key.

When you go to thaw your pumpkin bread, you will want to let it sit on the counter for several hours.
