Peaches and Cream Bars

These peaches and cream bars that are downright delicious. With a pie crust bottom, cram cheesecake filling, and peach topping you will love these peach pie bars. 

Peach Bars

I am loving everything peaches this year, from peach hand pies in the air fryer to peach streusel bread I am in peach heaven.

The other day I was feeling like peaches but then also thinking cheesecake sounded good too, so I decided to whip us these simple peaches and cream bars. 

These are so easy to make and taste delicious paired with a scoop of ice cream. The hardest thing about this dessert is waiting for them to cool for you to enjoy! 

What are Peach Pie Bars?

If you haven’t heard of pie bars before you probably are not alone! I really didn’t hear about them until I really started baking a lot. 

Pie bars are essentially pie in your hand that is portable! It has a phenomenal crust, a fruit filling of your choice and some sort of topping.

Prep Time: 20 minutes
Bake Time: 15 minutes + 35-40 minutes
Rest Time: 15 minutes
Total Time: 90 minutes

Serves 12+

Ingredients

Crust

  • 16 tbsp butter softened
  • 2 c granulated sugar
  • ½ tsp salt
  • 4 large eggs
  • 1 tsp lemon extract
  • ½ tsp vanilla extract
  • 3 c all-purpose flour

Cream Cheese Layer

  • 8 oz cream cheese softened
  • ½ c powdered sugar
  • ¼ tsp vanilla extract

Peach Layer

  • 4 c sliced fresh or canned/frozen peaches
  • 1 c granulated sugar
  • 4 tbsp peach juice
  • 2 tbsp corn starch

How to make peaches and cream pie bars

  • Preheat oven to 350°.
  • Line a 15x10x1 inch pan with foil, allowing about 4-inches to hang over on the short ends. This is used to help lift the pie from the pan when finished.
  • Spray with a non-stick cooking spray. 
  • Mix together butter, sugar, and salt until light and fluffy. 
  • Add eggs, one at a time, beating lightly after each addition. 
  • Add in lemon and vanilla extract and mix until combined.
  • Spread 3 cups of the dough mixture into prepared pan, spreading to edges and trying to keep the batter as even as possible.
  • Bake in the oven for 15 minutes and then set aside.
  • In a large bowl, mix together cream cheese, powdered sugar, and vanilla on medium speed until smooth and fluffy. 
  • Spread this mixture over the prebaked crust.
  • Combine corn starch and sugar. 
  • Mix in peach juice. 
  • Fold peaches into this mixture. 
  • Spread peach mixture over the cream cheese mixture.
  • Drop spoonfuls of the remaining dough mixture across the surface of the peaches.
  • Bake on center rack of the oven for approx. 35-40 minutes, until crust is golden brown.
  • Cool on a wire rack before serving.

Baking Tips and Tricks and FAQ

  • Be sure to let the peach bars cool prior to cutting. This will ensure that cut much better.
  • Skin off or skin on? It is really up to you! I have made these both ways and it is great either way! 
  • You can eat these bars as soon as they cool, but to be honest they taste the best right out of the fridge and with ice cream! Yum! 
  • These are richer than you think they are, so you can feed a crowd with just one pan especially serving them with ice cream. 
  • Ripe peaches make a huge difference with these peach pie bars. Be sure you check your peaches prior to making so they offer the most flavor. 

Can I use frozen or canned peaches?

I love using fresh peaches for this recipe, if you choose to use canned or frozen I would follow these tips.

Frozen- Thaw peaches completely. Rinse off any ice crystals and pat dry to remove excess water. 

Canned- Drain and rinse the peaches completely and pat dry to remove excess liquid. 

Storage

Refridgerator 

Once cooled you will want to store these in the fridge in an airtight container or wrapped in plastic wrap. They will keep for about 3-4 days. 

Freezer

If you are wanting to store peaches and cream bars in the freezer you will want to follow the recipe as directed and let them completely cool. 

Once cooled, you will cut them individually wrap them in plastic wrap and then in foil. Once all of them are individually wrapped you can store them all in an airtight container or Ziploc freezer bag. 

To enjoy after freezing bring them back to room temperature.
