Pumpkin Pie Rice Krispie Treats Recipe

If you have a party and need a quick and easy dessert to make, this is it! But be careful, you won’t be able to stop after eating just one!

Ingredients

For “crust”

  • 24 oz mini marshmallows
  • 5 tbsp butter
  • 6 cups Rice Krispies cereal

For “pie filling”

  • 8 oz mini marshmallows
  • 3 tbsp butter 
  • 1 tsp pumpkin pie spice, optional
  • 3 cups Rice Krispies cereal
  • Orange gel food coloring

How to Make Pumpkin Pie Rice Krispie Treats

  • To make these simple pumpkin pie rice Krispie treats, start by generously greasing a muffin tin. Set it aside.
  • Next, you’ll want to make the “crust.” Place a large pot of medium heat and add the “crust” portion of marshmallows and butter. 
  • Continuously stir until the marshmallows and butter are both melted and well combined. 
  • Once melted, remove the pot from the heat and quickly add the “crust” portion of Rice Krispies. Mix well to combine and coat the cereal.
  • Use a cookie scoop to scoop the mixture into each muffin tin cavity. 
  • Spray the bottom of a ¼ cup measuring cup or any other small cup with nonstick cooking spray. 
  • Press the bottom of the cup into each cavity to make an indent similar to that of a pie crust. Set the pan aside.
  • Next, you’ll make the “pie filling” portion by melting the butter, mini marshmallows, and pumpkin pie spice in a large pot. Stir until melted and combined.
  • Turn off the heat and add in orange food coloring until you reach a color that resembles pumpkin pie.
  • Add in the Rice Krispies and stir until well combined.
  • Use the cookie scoop to scoop a portion of the “filling” into each prepared crust. 
  • Use your fingers to press the filling into the crust so it’s firmly packed and flat.
  • Allow the pumpkin pie Rice Krispy treats to cool for at least 1 hour before serving. 
  • Top with whipped cream and a dash of pumpkin pie spice and enjoy!

Tips Tricks and FAQs 

  • You can use either salted or unsalted butter in your rice pumpkin pie Krispie treats. I personally prefer to use salted butter because I think it elevates the flavor, but either one will be just fine in this recipe. 
  • Pumpkin pie spice is optional in these treats but I never skip it! It makes them have that warm and cozy taste that we all love when we bite into a slice of pumpkin pie. If you don’t have any on hand, I’ve got the best pumpkin pie spice recipe you can try out. 
  • Do yourself a favor and measure out ingredients before you start this recipe! You want to be able to work quickly when making Rice Krispie treats, and having to measure things out while you work really slows you down. I like to measure things out and put them in bowls so they’re all ready to go. 
  • If you are making this for a party, you may want to use muffin tin liners instead of greasing your pan so that you can release and serve them easier. If you go that route, I would recommend grabbing some silver-colored liners so it looks just like a pie in a pie tin! 

Storage

Store your pumpkin pie Rice Krispie treats at room temperature for up to 5 days. If you are going to top them with whipped cream, wait until you serve them to top them so the cream can stay fresh in the fridge!
