I remember growing up I was deathly afraid of brussel sprouts. There was such a stigma about them and how horrible they were.

My mom would tell us stories about just how gross boiled brussel sprouts were and would threaten to feed us brussel sprouts if we wouldn’t eat our dinner.

Once I hit adult life, I was lucky enough to never have eaten Brussels sprouts. I was sailing high knowing that I had escaped the worst vegetable on this planet.

Then, it happened, one year we were visiting Ty’s family for Thanksgiving. I was in the buffet line next to one of his sisters. As we wandered down the line talking, I spotted them, brussel sprouts! I started to panic because I did not know what to do… I knew that I was going to have to at least put some brussel sprouts on my plate!

So, I took an ever so small scoop of them, hoping no one would notice how small it was and I returned to my seat with my 2 brussel sprout halves.

I decided I was going to down these things first so I didn’t ruin all the rest of my Thanksgiving… I had my water ready and so I popped one in as fast as I could and started to chew, but then I started to realize that this was the most amazing vegetable, at that moment I knew roasted brussel sprouts and I were going to be good friends!

From that moment of my first roasted brussel sprouts, I have tweaked and altered the recipe until I found the most perfect way to make roasted brussel sprouts with bacon and that is what I am sharing with you today!

Ingredients for Roasted Brussel Sprouts with Bacon:

1 lb brussel sprouts, rinsed.

3 Tablespoons Olive Oil

¼ teaspoon salt

⅛ teaspoon pepper

5 slices of bacon, cut into ½ inch pieces

 

Directions for Roasted Brussel Sprouts with Bacon:

First, you will want to preheat your oven to 400 degrees. Then spray your baking sheet with cooking spray. Set aside.

Wash and then slice your brussel sprouts in half. If they are really big, then in quarters and then place them in a large bowl.

 

Next, you will want to drizzle olive oil, salt, and pepper over the brussel sprouts and stir to combine. I love to let this sit for a few minutes to let the flavors combine together.

Next lay the brussel sprouts face down on the baking sheet.

Place the bacon in between the brussel sprouts. You want to make sure that the bacon is touching the baking sheet.

Bake for 10 minutes in the preheated oven. Do not open the oven for the first 10 minutes because this is the best way to that really golden crust. So no peeking if you want crispy brussel sprouts with bacon!

  1. Do not peek at the brussel sprouts the first ten minutes. The best way to get that yummy golden crust is to leave them without peeking and get those crispy brussel sprouts with bacon you want!
  2. If leaves fall off the sprouts while prepping, toss them on the baking sheet too! They will turn nice and crisp and are one of my favorite parts of making these!!!
  3. Pay close attention towards the end of cooking time – when the bacon starts to turn…things will move quickly!

To clean then go ahead and rinse them in cold water, Rinse off any dirt that you see and pull off some of the leaves that appear to be falling off or have blemishes.

You will want to do this with a santoku knife because it is nice and sharp.

First, go ahead and trim the tip of the stem and throw it away. Once you cut the bottom off, it is best to cut them in half so they roast to perfection.
