In our family, we love a good salmon recipe, but the problem I always seem to have is I can never get it to cook just right, until this salmon instant pot recipe. 

This recipe is almost failproof and is super easy to make. With a few simple ingredients and steps, you will have a nice salmon dinner on the table in less than 20 minutes.

Salmon and Rice Instant Pot Ingredients

  • 1 lb salmon filet (cut into two pieces)
  • 2 fresh lemons (sliced thin)
  • 3 tbsp butter (melted)
  • 2 bunches fresh dill (the amount you use is according to preference)
  • ½ tsp sea salt
  • 2 cloves fresh garlic (minced)
  • ⅓ tsp black pepper
  • 1 box rice pilaf mix (or 4-6 oz. of any rice of choice)

How to cook Salmon and Rice in the Instant Pot

  1. Spray a sheet of  heavy-duty aluminum foil with cooking spray.
  2. Lay 5-6 slices of lemon in a vertical row on the foil. Place sprigs of the dill on top of the lemon.
  3. Place the two pieces of salmon on top of the lemon and dill.
  4. Drizzle or brush melted butter onto the salmon.
  5. Sprinkle with the salt and pepper and minced garlic. Add more dill to the top. 
  6. Top with additional lemon slices. The lemon and dill can all be added according to taste. I like a lot of both.
  7. Fold the foil up over the salmon and seal all edges.
  8. Add 1½ cups of water to the bottom of the Instant Pot. Place the rice pilaf mix (or any rice of choice) into the water. Stir to mix.
  9. Add the trivet to the Instant Pot and place the foil-wrapped salmon on top.
  10. Seal your Instant Pot according to the instructions and set the timer for 5 minutes.
  11. When time is up, leave salmon in the pot for an additional 5 minutes on a Natural Release. Once this is done, then release any remaining pressure and remove to serve.

  1. Get creative! Add other spices and flavors to change up the flavor of this dish.
  2. This Instant pot salmon and rice dish calls for rice pilaf, but you can use other types of rice. Wild rice is a nice pairing with salmon.
  3. Cook with the same size pieces. When getting your salmon look for center cuts that are about the same size. This ensures they cook evenly.
  4. Serve quickly. You won’t want to wait too long after your salmon is cooked to eat, so be sure everything else is ready to go once your salmon is done.
  5. Let your salmon naturally release! I know it is so easy to do a quick-release on the Instant Pot, but those extra few minutes do wonders for the salmon.

Can you use frozen salmon?

Yes, you can use frozen fish for this salmon instant pot recipe. If your salmon is frozen you will need to increase the cooking time a bit to make sure it cooks thoroughly.

Should I remove the salmon skin for this recipe?

If the skin is still on the salmon when you buy it go ahead and leave it on while it cooks in your instant pot.

Once cooked, the skin will most likely stick the foil or it is easily removed after cooking.

Can I use a different fish with this recipe?

Yes, You can certainly use a different fish with this recipe. Just swap out the salmon for a different type and you have another delicious recipe.

You might have to adjust the cooking time a bit depending on the fish you select.
