There is something about this time of year that makes me crave pomegranates! I love using them any way that I can in my cooking, so recently I decided to combine my love for pomegranates with my love for brussel sprouts and create this delicious Shaved Brussel Sprout Salad with Pomegranates.

This salad uses a homemade honey mustard dressing (recipe included) that is so easy to make that is the perfect addition to all these other great flavors without overpowering!

  • Making your own salad dressing is so easy to do and is so much healthier for you than buying it! This honey mustard dressing takes just a few minutes to make and lasts in the fridge in a mason jar or salad dressing container for about 1 week.
  • First, you will want to combine all the ingredients in a small bowl. Then you will whisk until the ingredients are combined.
  • At this point, I move it to a salad dressing container so it stores easily in my fridge and I let chill while I make the salad.

  1. Almonds can be substituted for any nuts. So get creative! Try pecans, one of my favorite nuts in a salad!
  2. The mustard can be yellow or Dijon, whichever you prefer for the honey mustard dressing. I make this salad regularly and love the dressing with either type of mustard!
  3. This salad keeps overnight very well if you do not put the dressing on it.

Can Brussel Sprouts be eaten raw?

I think sometimes there is a stigma that brussel sprouts can’t be eaten raw. I am here to tell you that brussel sprouts are 100% safe to eat raw.

Some individuals do have a bit of gas or bloating due to the sugars in brussel sprouts if they are not cooked.

Just enjoy this brussel sprout salad with dried cranberries in moderation and you should be just fine.

Can I shred Brussel sprouts in advance?

Brussel sprouts stay fresher if they are left uncut. When prepping a salad I totally get that sometimes it is easier to prepare ahead of time.

If you choose to shred brussel sprouts ahead of time for this salad, try to do it earlier in the day. If you need to prep earlier than that, do it no more than 1-2 days in advance and store in an airtight container.

How do you shred brussel sprouts?

To shred your brussel sprouts with a knife you will want to use a clean sharp knife.

First, half the brussel sprouts long ways.

You will then turn the brussel sprouts so the cut side is now down.

Slice them crosswise. Make very thin cuts.

Loosen the layers by using your fingers.

Can you shred brussel sprouts in a food processor?

If you want to use a food processor to shred your brussel sprouts I can’t say that I blame you! You will want to use your slicing attachment and coarsely shred them.

How long does this brussel sprout and pomegranate salad last?

This salad will last up to a couple of days in the fridge in an airtight container if you do not add the dressing. So, if you are hoping to save some in the fridge for later, reserve some salad without dressing.

Do I have to use a honey mustard dressing with this shaved brussel sprout salad?

No! You do not have to use honey mustard dressing, although I do highly recommend it!

Vinaigrette dressings pair really nicely with this salad also!

I love this shaved brussel sprout salad, but I can’t find pomegranates!

Pomegranates are a seasonal fruit, unfortunately, so it makes it difficult to find throughout the year!
