  • To make this unicorn popcorn recipe, start by popping your popcorn kernels. You can make this in a popcorn maker or make your popcorn in an Instant Pot! You’ll want about 4-5 cups of popped popcorn which is usually about 3-4 tablespoons unpopped.
  • Lay the popcorn over 2 baking sheets and use the decorative spray to lightly coat the popcorn.
  • Turn the popcorn over and repeat on the other side. Leave the popcorn to dry for a few minutes.
  • Next, melt your candy melts separately by putting each color in a microwave-safe bowl and placing it in the microwave for 60 seconds.
  • Stir the melts and return to the microwave for 10-second increments until it’s completely smooth. Repeat with the other colors.
  • Fill piping bags with the candy melts and slowly drizzle each color over the popcorn.
  • Toss the popcorn to coat the other side with the chocolate and let the popcorn set for a few minutes before serving.

Tips Tricks and FAQs

  • Make sure your popcorn is plain and not buttered. I’m all for buttered popcorn but it’s not the best mixed with chocolate! You can find big bags of plain popcorn kernels near where the bagged movie-theatre type popcorn is.
  • If you find that your candy melts aren’t quite thin enough to make a nice drizzle, you can add about a teaspoon of oil. I usually use coconut oil but you could also use vegetable oil. Stir the oil into the melted chocolate and it should thin out enough without adding any oily flavor.
  • If you don’t have a piping bag handy, you can always add your candy melts into a resealable bag and snip of a bit of the corner for drizzling. You won’t have quite as much control but it will do the trick!

Storage

If you keep this unicorn popcorn in an airtight container at room temperature, it’ll stay fresh for about a week!
