I still find myself sneaking the first bite of this classic shortbread cookie recipe when I make them which always reminds me of being back home. There is something about shortbread cookies that screams the coziness of growing up!
Honestly, I think classic shortbread cookies are the most delicious and one of the easiest recipes to make with the rich buttery flavor they are sure to melt in your mouth every time!

How to Make Classic Shortbread Cookies
Prep time: 10 minutes Cooling time: 1 hour Bake time: 8-12 minutes
Vanilla Shortbread Cookie Ingredients
1 cup salted butter at room temperature, (**Kerrygold is best)
1 teaspoon vanilla extract
1 cup confectioners sugar
1 3/4 cups all-purpose flour
1 ½ scoops Provita Vanilla Supplement
Preheat oven to 325
Steps to Baking Shortbread Cookies
- Mix all ingredients together until well blended.
- Once the shortbread cookie ingredients are well blended, then you will want to choose your baking method for your shortbread cookies.
- After you choose your shortbread baking method, refrigerate the cookies for at least an hour or overnight before baking.
Shortbread Baking Methods:
Cutouts:
After step 1 above, roll the dough out to 1/8-1/4 inch thickness and make cut outs. Then put cut out pieces onto parchment paper lined cookie sheet and refrigerate for at least 1 hour or overnight, covered. Remove from refrigerator and bake at 325 degrees for approximately 8-12 minutes until edges are lightly golden.
Drop cookies:
After step 1, use a medium cookie scoop to scoop out dough and carefully make sure each cookie scoop is uniform in size. Line a cookie sheet with parchment paper and using your hands, roll each ball into a smooth ball and patting it slightly to form a perfectly formed cookie. Put each “cookie circle” on a parchment lined cookie sheet and place in the refrigerator for at least one hour. If leaving overnight you will need to cover. Remove from refrigerator and bake in preheated oven for about 10 minutes.
