Line a cookie sheet with parchment paper and using your hands, roll each ball into a smooth ball and patting it slightly to form a perfectly formed cookie. Put each “cookie circle” on a parchment lined cookie sheet and place in the refrigerator for at least one hour. If leaving overnight you will need to cover.
