Watermelon Salsa with Mint
If you ever come to my house in the summer you will probably always find a watermelon! There is just something about it that I absolutely love! This love of watermelon goes to my childhood when I would beg to have watermelon on my birthday!
In fact, my love of watermelon goes so deep that I would spend $5.00 on a small container of watermelon everyday throughout one of my pregnancies because I just couldn’t get enough of it! I know I am slightly crazy!
Then one day someone asked me, do you do anything with your watermelon like salt it or make anything? And I was like heck no why would I do anything so crazy!
The next day they brought me over some watermelon salsa and said that I had to try it… I was a little skeptical kind of like Sam in Green Eggs and Ham, but they FINALLY convinced me to try it! I tasted it and man did my mouth water!
Since then I have been perfecting my watermelon salsa recipe to find the perfect combination of deliciousness and that is what I am sharing with you today! My favorite Watermelon salsa recipe!
So how do you make Watermelon Salsa?
I love to make my watermelon salsa with mint! You can omit that if you don’t like mint, but it does make it taste so delicious!
Watermelon Salsa Ingredients
4 cups seedless watermelon, diced into very small cubes
1 cup cucumber, diced into very small cubes
1 cup red onion, diced
2 small jalapeno peppers, minced
¼ cup chopped mint leaves
¾ cup chopped cilantro leaves
1 lime- zested and juiced
Directions for making Watermelon Salsa with mint:
The first step to making watermelon salsa is to cut the watermelon and cucumber first. Because watermelon and cucumber are filled with a lot of water it works best if you cut these first and place them in a strainer for about 10 minutes. This helps prevent you from having a watery watermelon salsa!
Continue cutting the rest of the ingredients. We like 2 jalapenos in our watermelon salsa with mint, but that might be too much or not enough for you! So you, of course, can alter this. I always recommend doing a little and then add a little at a time until you reach a level of spice that you like. When using jalapenos I usually take out all the seeds and discard to reduce the heat as well.
Pro Tip: If you are trying to impress your guests with your culinary skills, try to dice everything the same size, except the jalapeno. By doing this it just escalates the beauty of the watermelon salsa!
When making watermelon salsa with mint you can use any mint, but it is especially good with Mojito mint! I love this one because it has a touch of lime to it!
Once all the ingredients are cut (and you have drained the cucumber and watermelon) then place all the ingredients in a bowl and mix well.
You can serve this immediately or cover and refrigerate for up to 3 days.

- You can also serve it with cucumbers! We have been doing this a ton lately with how many cucumbers we have this year from the garden!
- Watermelon salsa is AMAZING served over a simple grilled chicken! A must try for sure!
- Or you can make a bed of lettuce and add watermelon salsa on top for a watermelon salad type dish!
