If you ever come to my house in the summer you will probably always find a watermelon! There is just something about it that I absolutely love! This love of watermelon goes to my childhood when I would beg to have watermelon on my birthday!

In fact, my love of watermelon goes so deep that I would spend $5.00 on a small container of watermelon everyday throughout one of my pregnancies because I just couldn’t get enough of it! I know I am slightly crazy!

Then one day someone asked me, do you do anything with your watermelon like salt it or make anything? And I was like heck no why would I do anything so crazy!

The next day they brought me over some delcious watermelon cucumnber salsa with mint and said that I had to try it… I was a little skeptical kind of like Sam in Green Eggs and Ham, but they FINALLY convinced me to try it! I tasted it and man did my mouth water!

You will love this watermelon salsa. It is light, fresh, and dlcious! It is easily paired with chips or a great topper for chicken. The sky is the limit with this recipe!

Watermelon Salsa Ingredients

  • 4 cups seedless watermelon, diced into very small cubes
  • 1 cup cucumber, diced into very small cubes
  • 1 cup red onion, diced
  • 2 small jalapeno peppers, minced
  • ¼ cup chopped mint leaves
  • ¾ cup chopped cilantro leaves
  • 1 lime- zested and juiced

How to make watermelon Cucumber salsa

  • The first step to making watermelon salsa is to cut the watermelon and cucumber first. Because watermelon and cucumber are filled with a lot of water it works best if you cut these first and place them in a strainer for about 10 minutes. This helps prevent you from having a watery watermelon salsa!

  • Continue cutting the rest of the ingredients. We like 2 jalapenos in our watermelon salsa with mint, but that might be too much or not enough for you! So you, of course, can alter this. I always recommend doing a little and then add a little at a time until you reach a level of spice that you like. When using jalapenos I usually take out all the seeds and discard to reduce the heat as well.

  • This recipe you can make right before enjoying or ahead of time. If you make it ahead of time be sure to drain out the extra liquid prior to serving.
  • If you feel the need you can add a little bit of sugar to add some sweetness to this dish, but I usually eat it as is.
  • If you would like to make a non spicy version, omit the jalapenos.
  • Swap out the mint for basil to make Watermelon salsa with basil!

Storage

You will want to store your lefotvers in an airtight container for up to 3 days. Drain off the excess liquid before enjoying.
