Vanilla Coconut Granola Recipe

Ingredients
  

Dry Ingredients for Vanilla Coconut Granola Recipe

  • 6 cups Old Fashioned oats
  • 1/2 cup Wheat germ
  • 1/2 cup Oat Bran
  • 1 cup Cashews
  • 1 cup Chopped Pecans
  • 3/4 cup Pumpkins Seeds
  • 3/4 cup Slivered Almonds
  • 1 1/2 cups Unsweetened Coconut

Wet Ingredients for Vanilla Coconut Granola Recipe

  • 1/2 cup packed Brown Sugar
  • 2/3 cup Honey
  • 1 cup Coconut oil Liquified
  • 1 Tbsp + 2 tsp cinnamon
  • 2 Tbsp Vanilla
  • 1 tsp kosher salt

Instructions
 

  • First, you will want to toast your 6 cups of old fashioned oats for 20 minutes at 325 degrees. You will want to do this on a very large cookie sheet. Once toasted, remove from the oven and set aside. Turn oven down to 250 degrees. And yes,  I have forgotten this one one too many occasions!
  • When the oats are toasting, it is time to combine all the dry ingredients into a large bowl. This includes the wheat germ, oat bran, cashews, pecans, pumpkin seeds, and almonds. Do not add the coconut!
  • Next we will want to mix up the wet ingredients. First, take your coconut oil and liquify it. You will do this by measuring your one cup into a microwave safe bowl. After this put it in the microwave for a minute. Once a minute is up take it out and stir it. Repeat this process for 30 seconds at a time, until it is liquified. Next add the honey and return to the microwave for around 45 seconds. I do this to warm up the honey so it mixes a little bit better.  Then after you have combined the coconut oil and honey go ahead and add the brown sugar, cinnamon, vanilla and kosher salt. Mix this really well!
  • Once you have combined the dry ingredients and mixed up the "sauce" (wet ingredients), then it is time to add the oats to the dry ingredients. Pour the sauce over the nuts, seeds and oats and mix really well.
  • After it is mixed really well, you will want to return this mixture onto the cookie sheet. Spread the granola evenly.

Pro tip: Grab a really bug spatula like this one and us the back side to smooth out the granola mixture. It works so well! So grab yours here!

  • With the oven turned down to 250 degrees you will cook the granola for 1 hour. Every 15 minutes you will want to go and flip the granola, stir it and then flatten it back out. When there is 15 minutes left, add your coconut. Mix it in really well, flatten it out.
  • Once the hour is up turn off the oven. Let the granola stay in the oven for 30 more minutes. Remove from oven and then immediately mix it up. You will want to do this every 5 minutes or so until it is cooled. If you don't mix it and break it up while cooling it will be one giant vanilla coconut granola mass.
