First, you will want to toast your 6 cups of old fashioned oats for 20 minutes at 325 degrees. You will want to do this on a very large cookie sheet. Once toasted, remove from the oven and set aside. Turn oven down to 250 degrees. And yes, I have forgotten this one one too many occasions!
When the oats are toasting, it is time to combine all the dry ingredients into a large bowl. This includes the wheat germ, oat bran, cashews, pecans, pumpkin seeds, and almonds. Do not add the coconut!
Next we will want to mix up the wet ingredients. First, take your coconut oil and liquify it. You will do this by measuring your one cup into a microwave safe bowl. After this put it in the microwave for a minute. Once a minute is up take it out and stir it. Repeat this process for 30 seconds at a time, until it is liquified. Next add the honey and return to the microwave for around 45 seconds. I do this to warm up the honey so it mixes a little bit better. Then after you have combined the coconut oil and honey go ahead and add the brown sugar, cinnamon, vanilla and kosher salt. Mix this really well!
Once you have combined the dry ingredients and mixed up the "sauce" (wet ingredients), then it is time to add the oats to the dry ingredients. Pour the sauce over the nuts, seeds and oats and mix really well.
After it is mixed really well, you will want to return this mixture onto the cookie sheet. Spread the granola evenly.
