Copycat Panera Broccoli Cheddar Soup

Enjoy this copycat Panera Broccoli Cheddar Soup for half the price of eating at Panera Bread!

Ingredients
  

  • 1 1/2 Tablespoons Butter
  • 1 Medium Onion
  • 1/4 Cup Butter
  • 1/4 Cup Flour
  • 2 Cups Half and Half
  • 2 Cups Chicken Broth
  • 1 1/2 Cups Broccoli Fresh or Frozen
  • 3/4 Cups Carrots Grated
  • 8 Ounces Cheddar Cheese Medium or Sharp
  • Salt and Pepper, to taste

Instructions
 

  • First, you want to saute the onion. Melt 1 1/2 Tablespoons butter in a pan and then throw the chopped onion in there. Cook until tender. Set aside when done.
  • In a large pot, (I love this one for soup) mix 1/4 cup of butter and flour together on medium heat. This is the perfect whisk to really get them to mix well together! This will cook for about 3 minutes.
  • Once this becomes a roux, then slowly add the chicken broth and half and half and whisk. Let this cook on medium-low heat at a simmer for around 15 minutes or so. Be sure to whisk on occasion so your soup does not burn on the bottom.
  • Next, add the broccoli, the carrots, and the sauteed onion to your soup. You will want this to simmer for about 15 minutes, stirring on occasion so it doesn't stick to the bottom of the pot. Cook until the vegetables are tender.
  • Add salt pepper and cheese. Let the cheese melt and mix together. Serve in bowls or bread bowls sprinkled with a little cheese on top if desired!
