Hello, Cranberry Brie Bites; where have you been my whole life?

We have all been! We get invited to our friend’s Christmas party or better yet a work function and we have to bring an appetizer to share.

We all start panicking because what are we going to take?

We want it to look like we spent hours preparing it, but we have like 5 minutes to make it and we can’t be the one that shows up with the Costco appetizer, again…

Don’t worry; I have been the Costco girl my fair share too!

But guess what? Thanks to these Cranberry brie bites, I am no longer the Costco appetizer girl… I am the “Girl, how did you have time to whip these up with all the kids you have?”

So today I am sharing my little secret with you, these Cranberry Brie Appetizers, so you can be the talk of the next holiday party too!

These phenomenal cranberry brie appetizers are a total game-changer when it comes to appetizers! Ready in just a few minutes, they are perfect for holiday parties or any get together you are going too, even ladies’ night out or book club!

There is just something about the flaky puff pastry with melted brie topped with this savory cranberry topping. I mean mouth is seriously drooling things about it right now!

The best thing about these Cranberry Brie Bites is that they look like you spent hours slaving in the kitchen when it really takes no time at all.

  • Yield- 15 bites
  • Prep Time: 10 minutes

Ingredients for Cranberry Brie Bites:

  • 15 count package frozen mini fillo shells
  • 3 ounce package of brie cheese
  • 1 cup cranberries (fresh or frozen)
  • ¼ cup water
  • 2 Tablespoons white granulated sugar
  • A few sprigs of rosemary- optional

Directions for Cranberry Brie Appetizers:

  • First, you will want to preheat the oven to 400 degrees.
  • On an ungreased cookie sheet evenly place the fillo shells right side up, about one inch apart. Set aside.

  • Then in a small saucepan, combine the cranberries and water and stir.
  • Top with a one-inch piece of rosemary.
  • Bring the sauce to a boil over medium heat, then reduce to low.

  • Stir this mixture until the cranberries begin to pop, then immediately remove from the heat. You will want to remove the cranberries quickly after they start to pop, to avoid them from becoming mushy. You want them to hold their shape a bit with this dish.
  • You will want to discard the rosemary and set the cranberry mixture aside.

  • Slice the brie into 15 pieces and distribute it into the fillo shells. You want to fill the cups completely with cheese because brie melts down about 50%. So fill them up completely!
  • Bake in preheated oven for about 5 minutes or until the brie is smooth and melted.

  • Remove from oven and place 3-5 cranberries in each fillo shell.

  • Garnish with a small sprig of rosemary, if desired and serve immediately.
  • If you need to reheat them, pop them back in the oven on the lowest setting to crispy back up the fillo shells and melt the brie.

Tips and Tricks for making Cranberry Brie Appetizers

  1. You can make this appetizer with, or without the rind of the cheese included.
  2. Fill the cups completely with cheese, remember brie melts down about 50% so fill those shells up!
  3. Remove the cranberries quickly after they start to pop, to avoid mushy berries. You want them to hold their shape a bit with this dish.
  4. If you don’t feel like whipping up the cranberry topping you can use a canned whole berry cranberry… But I much prefer the homemade, and it looks so pretty too!
  5. For this to work the best, be sure to thaw the puff pastry before using it.
  6. If you are not a fan of cranberry or want to mix it up, try other toppings such as raspberry or strawberry jam or orange marmalade. By changing this up, you don’t have to wait for just the holiday season to enjoy. Just make sure to pick something on the sweeter side to compliment the brie.

Can you freeze Cranberry Brie Bites?

If you want to make these Cranberry Brie Bites ahead of time you absolutely can! You will want to cook these and then place your cranberry brie bites in a freezer bag and get the air out of them. Then when you are ready to eat these you will want to reheat them in the oven.

Can you reheat brie in puff pastries?

If you are trying to reheat brie you need to reheat it in your oven. You will want to use the lowest setting usually 160 to 200 degrees Fahrenheit.

After 20 minutes or so, the crust will become crispy again and the cheese will be runny and soft.

Can brie cheese go bad? How long does brie cheese Last?

Brie Cheese does go bad. Since brie is a soft cheese it has an even shorter shelf life than other cheeses. Once Brie is opened it typically lasts 1-2 weeks after it is opened when it is kept in the fridge.

How do I know if brie has gone bad?

As brie gets older it gives off a little bit of an ammonia smell. This does not mean that it is spoiled.

When you unwrap the brie let it sit out for a minute or two.

If the rind smells some, but the cheese is still creamy, then it is still safe to eat.
