My family can’t live without our Taco Tuesdays and these Weight Watchers Chicken Tacos are becoming a regular part of our rotation!
And before you rule this recipe out thinking it’s just some healthy version of regular tacos, think again! These tacos are seriously good!
They are so juicy and flavored perfectly. Between my husband, me, and my kids, there hasn’t been a person who doesn’t love them. Especially when we serve them up with some chips and Mango Salsa.
They also make the best leftovers, so make sure you make a big batch!

- 1 ½ lb boneless, skinless chicken breast, cut in small cubes
- 1 tsp sugar
- ½ lime, juiced
- ⅛ cup red wine vinegar
- 2 cloves garlic, minced
- 2 green onions, chopped
- ½ tsp salt
- 1 tsp fresh cilantro, chopped
- ½ tsp ground black pepper
- 10 6-inch flour tortillas
- ¼ cup lettuce, shredded
- 1 tomato, diced
- ¼ cup salsa
- ¼ cup shredded Monterey Jack cheese
