Mermaid Lemonade Mocktail Recipe

Ingredients
For The Syrup
- 1 cup water
- 1 cup granulated sugar
- Electric blue gel food coloring
For The Pineapple Lemonade
- 9-10 lemons
- 1 cup granulated sugar
- 2 cups boiling water
- 5 cups cold water
- ½ cup pineapple juice

How to Make a Mermaid Lemonade Mocktail

- To make your mermaid lemonade mocktail, start by making your syrup.
- Add the 1 cup of water and 1 cup of granulated sugar to a medium-sized saucepan.
- Bring the mixture to a boil and continue stirring until the sugar is completely dissolved.
- When the sugar is dissolved completely, remove the saucepan from the heat and add about 3-4 drops of gel food coloring until you have a deep blue color.
- Place the syrup in the fridge to cool completely.
- To make the lemonade, add 2 cups of boiling water and 1 cup of sugar to another saucepan and bring it to a boil.
- Stir the syrup mixture until the sugar is dissolved.
- Remove the saucepan from the heat and while it cools you can begin juicing your lemons.
- Juice all of the lemons and add the juice to a large pitcher.
- Add the pineapple juice, 5 cups of cold water, and cooled uncolored syrup to the pitcher.
- Stir the lemonade mixture to combine and place in the fridge to chill.
- When the mixtures are both completely chilled, pour the lemonade into some glasses about ¾ of the way full.
- Slowly pour the blue syrup into the lemonade to create an ombre look.
- When you are ready to serve the drinks, stir the lemonade and syrup together and enjoy!
Tips Tricks and FAQs
- I always leave this drink separated for looks, but of course you want it stirred together when you drink it so you have the perfect mix of sweet and sour. If you are serving these at a party, you may want to place a decorative spoon in each glass so people know to stir before they drink!
- It’s tempting to get impatient with the syrups and take them off the heat early, but you need to make sure that all the sugar is 100% dissolved before taking the mixture off the heat. If the sugar doesn’t dissolve, you’ll have a grainy mocktail instead of a smooth sweet mocktail!
- For the pinterest-perfect look, you’ll want to have some lovely square ice cubes in each glass. I love my square ice silicone mold because the ice pops out great and the perfect cubes just look so cute in any cold drink!
Storage
I wouldn’t suggest storing these drinks after pouring them, but you can store the syrup and the lemonade separately for up to 3 days in the fridge. Just make sure everything is in a sealed container!
You can also freeze your lemonade or syrup into ice cubes and pop them into a bag in the freezer for up to 4 months. They work great when added into smoothies and other frozen drinks.
