Ingredients
- 1 box white cake mix
- 1 cup water
- ½ cup vegetable oil
- 3 eggs
- 4 cups boiling water, divided
- 1 3 oz package strawberry jello mix
- 1 3 oz package lemon jello mix
- 1 3 oz package blue raspberry jello mix
- 1 3 oz package lime jello mix
- 1 8 ounce package of Cool Whip, whipped topping
How to Make Rainbow Poke Cake
- Preheat the oven to 350 degrees and prepare a 9×13 inch baking pan with a light coating of cooking spray. Set aside.
- In a large bowl, combine cake mix, water, vegetable oil, and eggs. Mix until thoroughly until combined.
- Pour batter into the 13×9 pan and bake for 25 minutes. Be sure to make sure that a toothpick comes out clean when inserted.
- Set cake aside to cool.
- Take the handle of a wooden spoon and poke holes in the cake. Make all your holes 1 inch apart.
- In four small bowls, combine each jello package with 1 cup boiling water. Whisk together until fully combined.
- Pour 1 Tablespoon of the jello mixture into the holes in the cake. Alternate colors according to preference until each hole has been filled. Do not use all the jello.
- Place the cake into the refrigerator and let it cool for 2 hours.
- Spread the whipped topping over the cooled cake and top with sprinkles right before serving.

- Get creative! You don’t have to use a white cake mix. You can use a vanilla or a yellow cake mix as well. The thing about the white cake mix is it really helps the colors pop!
- Don’t rush the chilling process! The bottom is the most important part to allow to settle and will take the full 2 hours. If you rush it and don’t wait, you will wind up with a soggy bottom cake.
- If you don’t have a circular wooden spoon you can use a straw or a toothpick. You really just need something that pokes round holes.
- Don’t use all the jello! You just want to fill each hole with about 1 Tablespoon of the desired color.
- For a perfect cut to really see all the pretty colors clean your knife with each cut!
- If you are in a hurry you can freeze your cake for 30 to 60 minutes in the chilling process. Just be sure you don’t freeze the cake in the process.

Be sure to store your poke cake in the fridge in an airtight container. This will keep for about 3 days.
