But this farmers market egg casserole helps me make a great breakfast without taking up too much time! I can just throw it in the oven to bake while we get ready for our day and it’s perfect when it’s time for breakfast. It’s an absolute lifesaver!

This ham and cheese breakfast casserole is the best! It’s so simple to put together but tastes like it took hours of preparation.
Ingredients
- 9 large eggs
- 6 cups Frozen Ore Ida Hash Browns
- 1 ½ cups colby jack cheese, shredded
- 1 cup green onions, optional
- 2 cups diced ham
- 2 cans evaporated milk
- ¼ tsp salt
- ¼ tsp black pepper

How to Make a Ham and Cheese Breakfast Casserole

- To make your farmers market egg casserole, start by preheating your oven to 350 degrees.
- Grease a 9×13 baking dish with butter or nonstick cooking spray.
- In the bottom of the dish, spread the hashbrowns in an even layer.
- Top the hashbrowns with a layer of cheese, followed by the cheese, ham, and green onions. Set aside.
- In a large mixing bowl, add the eggs, evaporated milk, salt, and pepper.
- Whisk the egg mixture until well combined and pour it right over the layered mixture in the dish.
- Bake the casserole in the preheated oven for 1 hour or until the center is set and firm.

- I know it only takes a few minutes to prepare, but to make things even easier I like to prepare the casserole the night before. After I pour the egg mixture on the casserole, I seal it with the lid and place it in the fridge. If you don’t have a 9×13 pan with a lid, you can also use some plastic or cling wrap. Then in the morning all I have to do is preheat the oven and pop it in!
- For the cheese lovers out there, you can shred about ½ to 1 cup of cheese to put on the casserole about 5 minutes before it’s done baking. It’ll add a cheesy delicious topping to the casserole that makes it even more delicious!
- You can double this recipe with no problem! This is a great recipe to make when you have family in town, for big sleepovers, or any other time that you have lots of mouths to feed. Just double the ingredients, split them into the respective pans, and split the egg mixture as evenly as you can before putting the pans in the oven.
Storage
Once baked, you can keep this farmers market egg casserole in the fridge for up to 3 days in an airtight container.
You can also store it before baking to make things even easier. After putting the casserole together, seal it or put a lid on your dish and it will stay fresh for up to 24 hours before baking.
