I’m almost always picking recipes based on how easy they are and how fast I can get them ready. So when I can find a recipe like loaded smashed potatoes that is easy, fast, and so yummy too, it’s a huge win!
Potatoes are an absolute staple in our home, from pesto roasted potatoes to potato soup.
But my kids go crazy for these cheesy bacon smashed potatoes. And I sure love them too! I mean, what could be better than creamy soft potatoes covered in bacon and cheese?

Loaded Smashed Potatoes Recipe
These quick loaded smashed potatoes kick any other potatoes to the curb! This recipe is going to be your new best friend for weeknight meals, dinner parties, and more.
Ingredients
- 1 ½ lbs yellow baby potatoes, washed
- 2 tbsp olive oil, divided
- 1 ½ tbsp butter, melted
- Salt and pepper, to taste
- 1 cup cheddar cheese, shredded
- 8 strips bacon, cooked to crisp and crumbled
- 2 tbsp fresh chives, chopped

How to Make Loaded Smashed Potatoes

- To make your loaded smashed potatoes, first start by preheating the oven to 450 degrees.
- Fill a large pot with water and bring it to a rolling boil.
- Carefully drop the potatoes into the boiling water and let boil for about 15-20 minutes or until tender.
- While the potatoes boil, make sure your butter, cheese, bacon and chives are prepared and ready to go!
- Prepare a sheet pan by brushing it with 1 tablespoon of the olive oil. Set aside.
- When the potatoes are tender, remove them from the water and place them on the oiled pan.
- Use a fork to smash each of the potatoes down until they are about ½ inch tall or so.
- Brush the top of all of the potatoes with the remaining 1 tablespoon of oil.
- Bake in the preheated oven for 15 minutes.
- When the potatoes are golden, remove them from the oven and brush them with melted butter.
- Top each of them with the salt and pepper, cheese, and crumbled bacon.
- Return the potatoes for 3-5 minutes or until the cheese is melted and the potatoes are starting to get crispy on the edges.
- Sprinkle the fresh chopped chives over the tops and enjoy your loaded smashed potatoes while they are hot!
Tips Tricks and FAQs
- Smash carefully! You want to be able to smash them down while still keeping the potato in one piece. It really helps if the potatoes are completely cooked, so make sure they are very tender before you put them on the baking sheet.
- You can use other varieties of potatoes, but yellow baby potatoes are my favorite! They bake so well and get crispy on the outside but soft and almost creamy on the inside. You can also use red potatoes but you’ll want to make sure that they are small so you don’t affect the baking times.
- I usually add a generous bit of salt to the water before boiling my potatoes. Salt is a huge flavor-booster and when you add enough to your water it makes a huge difference in the final flavor of your loaded smashed potatoes.
Storage
Store your potatoes in the fridge for up to 3 days. To reheat, preheat your oven to 375 degrees and bake for 10 minutes or until warm.
