Caramel DeLites Donuts (Just Like the Girl Scout Cookies!)

Do you call the delicious caramel coconut cookie Somoas or Caramel DeLites? Whatever you call them, these girl scout cookie style donuts covered in chocolate, gooey caramel, and coconut are just like them and the best treat.

Caramel DeLites Donuts

After my kids tried my thin mint donuts, they started begging for me to try out other girl scout cookies flavors. And that’s a request I’m happy to grant. So I present to you… Caramel DeLites donuts! 

Depending on where you live, you may call them “Somoas” or “Caramel DeLites.” Either way, they are seriously delicious and the perfect dessert or breakfast treat. 

And this Caramel DeLites donut recipe tastes JUST like them. It’s a simple baked donut glazed with rich chocolate and covered in the best coconut caramel topping. Don’t mind me licking my spoon with this one!

Caramel DeLites Donut Recipe

Ingredients

For donuts

  • 1 cup all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking powder
  • 1/ tsp baking soda
  • ⅛ tsp ground nutmeg
  • ⅓ cup granulated sugar
  • ¼ cup milk
  • ¼ cup sour cream
  • 1 large egg
  • 2 tbsp butter, melted
  • 1 ½ tsp vanilla

For Glaze

  • 1 15 oz bag caramels
  • 3 cups shredded sweetened coconut, toasted
  • 3 tbsp milk
  • ¼ tsp salt
  • 1 cup chocolate, melted

How to Make Caramel DeLites Donuts

  • The first step in making donuts is preheating your oven to 350 degrees. 
  • Prepare a donut pan by spraying it with nonstick cooking spray. Set aside. 
  • In a medium-sized mixing bowl, add the flour, baking powder, cornstarch, baking soda, sugar, and nutmeg. Whisk them together until well combined.
  • Add the milk, egg, sour cream, melted butter, and vanilla extract. Stir the batter until it’s combined well and free of any clumps. 
  • Pour the batter into a piping bag or Ziploc bag and cut the tip. 
  • Pipe the batter about ⅔ full into the prepared donut pan and bake for about 9-10 minutes or until a toothpick that is inserted comes out clean. 
  • When the donuts are finished baking, let them cool for 5 minutes in the pan and then remove them and place them on a cooling rack to finish cooling. 
  • While the donuts cool, you can get started on your toppings. Melt the chocolate and dip each donut into the chocolate about halfway. Return them to the cooling rack so the chocolate can set and set the extra chocolate aside.
  • To make the coconut topping, microwave the caramel and milk in a medium-sized microwave-safe bowl for about one minute. Give the caramel a stir and repeat until it’s melted.
  • Once smooth, add the toasted coconut and salt and stir. 
  • Use a butter knife to spread the coconut mixture right on top of the set chocolate. Let the donuts cool so that the topping can harden.
  • Use a fork to drizzle the extra chocolate on top of the donuts and set a final time before enjoying your donuts.

Tips Tricks and FAQs

  • Here’s the easiest way to melt your chocolate for dipping. Put the chocolate (chips, melts, or bars all work just fine) in a microwave-safe bowl. Microwave for 1 minute and stir the chocolate. Continue microwaving for 30 seconds at a time and stirring after each time until the chocolate is just about melted. Continue stirring until the chocolate melts completely and it’ll be all ready for dipping!
  • Be careful not to overheat your chocolate or your caramel. Microwaving slowly will help them melt without seizing or burning. 
  • Try to be as even as possible when you are piping the donut batter into the pan. You want each donut to have the same amount of batter so that they cook evenly. The piping bag is super helpful for keeping things nice and even!

Do I need to toast my coconut flakes? 

Toasting your coconut flakes is essential for this recipe. It’s going to bring out a beautiful coconut flavor. But don’t worry. It’s super easy!

Just preheat your oven to 375 degrees and place the coconut in an even layer on a parchment-lined baking sheet. Bake the coconut for 7-8 minutes or until it starts to turn a golden color.

Let the coconut cool slightly as you make your donut batter and it’ll be ready when you make your caramel topping.

You can store these donuts in an airtight container right on the counter for 2-3 days.

Freezer

The good news is that you can freeze them as well! They should last in the freezer in a sealed container for about 3-4 months. Just pull them out and let them thaw as you need them.
