Every mom has at least one child that goes through a unicorn phase, and we are right in the thick of it with my daughter right now! She goes absolutely crazy for these swirled rainbow Unicorn Cheesecake Bars.

And honestly, I don’t mind because aside from the fun rainbow swirl, this recipe just makes the most creamy and smooth cheesecake bars ever! 

If you haven’t made cheesecake before, this is a great recipe to get you started. Although I’m partial to my instant pot cheesecakes, this bar recipe is a simple, fool-proof method that makes enough treats for a large family or group. 

Of course, if you have someone who loves unicorns and rainbows in your group, it’ll be even more special!

Unicorn Cheesecake Bar Recipe

Unicorn cheesecake bars are a quick way to whip up a fun dessert that people will rave about. And the rainbow swirl is perfect for any Unicorn party!

Ingredients

For cheesecake

  • 16 oz (2 packs) cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • ¼ cup sour cream
  • 2 tsp vanilla extract
  • Gel food colors

For crust

  • 1 cup graham cracker crumbs or bills wafers
  • 2 tbsp sugar
  • ¼ cup melted butter

How to Make Unicorn Cheesecake Bars

  • To make your unicorn cheesecake bars, start by preheating your oven to 325 degrees and spraying a 9×13 baking dish with nonstick cooking spray. Set it aside.
  • Next, place your graham crackers in a plastic bag and crush them until they are fine crumbs.
  • Pour the crushed graham crackers into a mixing bowl and add in the melted butter and sugar. 
  • Stir the crust mixture until well combined.
  • Pour the crust into the prepared baking dish and use your fingers to press it into the bottom of the dish. Set aside.
  • In a large mixing bowl, add the softened cream cheese and beat it until smooth and fluffy.
  • Add in the sour cream and sugar and beat again until combined. 
  • One at a time, add in each of the eggs and beat until smooth after each. 
  • Next, add the vanilla and beat again until the whole filling is smooth, making sure to scrape down the sides of the bowl. 
  • Separate the finished batter into 3-4 bowls, depending on how many colors you would like to use.
  • Add in gel food colors to each bowl and stir gently to fully incorporate the colors. 
  • Spoon the batter onto the prepared crust, alternating colors in whatever pattern you like.
  • Use a spoon or spatula to swirl the colors and spread the filling evenly over the crust.
  • Bake the unicorn cheesecake bars in the preheated oven for 35-40 minutes or until the center is set and the edges are beginning to brown.
  • When the cheesecake is down, remove it from the oven and let it cool completely on the counter.
  • When it’s completely cool, cover and chill the cheesecake bars in the fridge for at least 2 hours before slicing and serving.

Tips Tricks and FAQs 

  • I love using my food processor to make the crust because it makes things so quick and easy. Simply place your graham crackers in the food processor and pulse until they are fine crumbs. Add in the melted butter and sugar and pulse again until the crust comes together and everything is combined. 
  • Having completely softened cream cheese is essential for having a smooth and creamy cheesecake! Make sure that you take out your cream cheese 1-2 hours before making this recipe so that it’s ready to go. If you forget, you can also place a sealed package of cream cheese in a bowl of warm (not hot) water for 10-15 minutes to speed up the process. 
  • If you want to display the bars, you may want to use parchment sheets instead of spraying your pan with cooking spray. That way you can easily lift out the whole pan and slice carefully before serving for effortless and beautiful pieces.

Storage

These bars will store wonderfully in the fridge for up to 4 days. Just keep them in a sealed container or covered in your baking dish and take them out as you need them!
