Cake:

2 eggs

1 cup sugar

2 tablespoons butter, softened

1 cup vegetable oil

½ cup cocoa

½ cup buttermilk

1 teaspoon vanilla

2 ¼ cups flour

1 teaspoons baking soda

1 ½ teaspoons baking powder

¼ teaspoon salt

1 cup boiling water

½ cup chocolate chips

½ cup butter, softened

1 2/3 cups icing sugar, sifted

1 teaspoon vanilla

3 tablespoons half-and-half

How to Make Double Chocolate Cupcakes

Cupcake:

The first thing you want to do when making double chocolate cupcakes is preheat your oven to 350° F and line two 12-cup muffin pans with cupcake liners. Set your muffin pan aside.

Next, in a large mixing bowl beat together the eggs, sugar, butter, oil, cocoa, buttermilk and vanilla.

Then in a medium bowl stir together the flour, baking soda, baking powder and salt.

You will gradually stir your flour mixture into the wet egg mixture.

Next, you’ll want to add the boiling water and mix well.

Gently fold in the chocolate chips.

Now you will pour or spoon the batter into the prepared liners filling each about halfway.

Finally, bake your cupcakes for 20 minutes, or until a toothpick inserted in the center comes out clean.

Make sure to allow the double chocolate chip cupcakes to cool completely on a wire rack before frosting!

Frosting:

For the frosting, get out a large mixing bowl and cream together the butter and icing sugar.

Next, add the vanilla and half-and-half and blend until smooth.

Frost the double chocolate cupcakes when they have cooled completely and sprinkle with Valentine sprinkles.

*If you would like to drizzle chocolate on top of the frosting, place ½ cup of chocolate chips in a Ziploc bag. Place the sealed bag in a bowl of hot water until the chocolate melts, then dry the outside of the bag before cutting off a corner of the Ziploc. Drizzle the melted chocolate over the frosted cupcakes.

How Can I Make My Cupcakes More Moist? 

It can be really disappointing when cupcakes come out dry. There are a few tricks you can try to make sure your double chocolate cupcakes are perfectly moist. The first thing you want to make sure you do is not overbake them.

Overbaking the cupcakes causes them to become dry and crumbly. To avoid this, check your double chocolate chip cupcakes a few minutes before the timer goes off to make sure you pull them out as soon as the toothpick comes out clean. 

Another trick to perfectly moist double chocolate cupcakes from scratch is to freeze them! You might think I’m crazy, but I promise it works! If your cupcakes are not overbaked, placing them in the freezer will lock in that moisture. 

This is also a great trick because you can make your double chocolate cupcakes and store them, unfrosted and covered with plastic wrap, in the freezer for up to a week before you will need them. Just pull them out to thaw on the counter at least 3 hours before you will be frosting them. 

 

What Makes a Cupcake Fluffy? 

Those air bubbles in your double chocolate chip cupcakes are what is going to make them light and fluffy. Try not to mix your batter too much because the more you mix, the more you will knock out those air bubbles, causing your batter to deflate.

Once I add my flour mixture, I mix the batter just until it has combined to avoid overmixing. Another trick to a fluffy double chocolate cupcake is allowing your batter to rest for 15 minutes before scooping into the cupcake liners. This gives a little bit of time for those nice air bubbles to grow! 

 

How do you Stiffen Buttercream? 

I have had times where I went to frost my cupcakes and the frosting didn’t hold up. This can be super frustrating. If you notice this happening with your frosting, mix in a little bit more powdered sugar to bring the icing to more of a piping consistency. Make sure to just add a little bit at a time so your frosting doesn’t end up tasting too sweet! 

 

Do You Spray Cupcake Liners? 

It isn’t usually necessary to spray your cupcake liners but it doesn’t hurt anything if you want to be extra cautious and spray them! Just make sure to spray them over the sink or dishwasher to prevent your spray from going all over the kitchen! 

 

Can I Make Cupcakes Without Cupcake Liners? 

You can definitely make double chocolate cupcakes from scratch without liners. The risk of doing this is that your cupcakes are more likely to stick, which can be really frustrating, so make sure you spray the cupcake tin really well before adding the batter. The baking spray that I swear by is Baker’s Joy. It works like a charm, every time! 

 

Do Cupcakes With Buttercream Frosting Need to be Refrigerated?

Once you frost your double chocolate chip cupcakes with buttercream, they can be left out for up to four hours. After four hours, store them in an airtight container and store them in the refrigerator to keep the frosting fresh. When you want to serve them, put them on the counter an hour before to bring them back to room temperature.  

 

Can You Freeze Cupcakes With Buttercream Frosting? 

These double chocolate cupcakes from scratch will taste best if frosted fresh. However, if you need to, you can freeze the frosted cupcakes. Bring them to room temperature before serving by leaving them out on the counter for 2 hours. You can always freeze the unfrosted double chocolate cupcakes and add fresh frosting to them when you’re ready to serve. 

 

How Far in Advance Can You Frost Cupcakes? 

Double chocolate cupcakes from scratch are best when frosted the day that you will be serving them but they will still taste delicious if you need to frost them a day ahead. If you decide to frost them a day ahead, make sure to store them in an airtight container in the fridge and pull them out an hour before serving them so they can come to room temperature. 

 

How Long do Frosted Cupcakes Stay Fresh? 

Store any leftover double chocolate chip cupcakes in an airtight container in the fridge for up to three days. Bring them to room temperature by setting them out on the counter at least one hour before eating.
