We love potato dishes in our home, especially easy ones like Instant Pot potato soup or German Potato Soup! But now that it is starting to be warmer outside it is not really soup season.

So, with warmer weather on the horizon, we are focusing on easy dishes that are delicious! These pesto roasted potatoes are a great addition to your side dishes! They are quick to prep, ready in about 30 minutes and delicious to eat!

2 lbs petite red potatoes, quartered

2 tbsp olive oil

2 tbsp fresh basil, finely chopped

4 cloves garlic, minced

1 tsp salt

1 tsp pepper

2 tsp parmesan cheese, grated

I love making this simple potato dish because it takes just a few minutes to get ready and then I can throw it in the oven!

The first thing that you need to do is preheat your oven to 350 degrees and spray a baking sheet with nonstick cooking spray. Then you can clean and chop your potatoes.

Chop each into quarters and then add them to a large bowl. You can also finely chop your basil and mince your garlic and add both to the same bowl.

Add the olive oil, salt, pepper, and parmesan cheese and stir the mixture together until your potatoes are completely covered with the oil and seasonings.

Pour the potato mixture onto the prepared baking sheet and spread out so that they are in a single layer. Place the sheet in the oven and bake the potatoes for about 30 minutes, stirring and flipping them about halfway through baking.

Tips and tricks for Pesto Roasted Potatoes

  1. Potatoes can be a little tricky to clean with all their bumps and their rough skin. The easiest way to do it is with a brush made for vegetables. This OXO Vegetable Brush is small and perfect for cleaning any vegetable with just a quick. It’s also really inexpensive so overall it’s a great find!
  2. Stick to red potatoes for this recipe! Their waxy texture and thin skin make them the perfect potato for roasting. They’ll keep their shape and hold onto flavors well making them extra delicious and beautiful.
  3. You can choose to peel the potatoes if that’s what your family prefers. Red potatoes have great thin skin so I don’t ever have any complaints. However, if you have an especially picky eater in your home it won’t make any difference in the recipe to peel them.
  4. If you are short on time, cut your potatoes a bit smaller and they will roast faster! I think quartering the petite potatoes is a great size, but if I’m ever in a pinch and need a quick side dish I will chop the potatoes into a smaller rough dice and cut back on the baking time.

Does it really matter what kind of potatoes I use?

Yes and no. A lot of people have a preference of their family’s favorite type of potato. Honestly, you could use any type and it would work just fine for this recipe!

However, the best potatoes for roasting are red potatoes and fingerling potatoes because they are waxier. The waxy potatoes with thinner skins are better for roasting because they hold their shape well!

You’ll want to use red potatoes if you want those beautiful quarters of red potatoes instead of a mushy mess!

 

How should I store any leftovers?

You can store these leftovers pretty easily just like you would any other potato dish. Make sure that your potatoes are in an airtight container and stick them in your fridge. They should last about 5-6 days without a problem.

You can always pop your leftovers in the microwave, but if you take the time to throw these potatoes back in the oven to bake for 5-10 minutes they will have a better texture and flavor when they are hot again.

I like to throw an extra handful of finely chopped basil on my leftovers before I reheat them and they will taste just like new.

 

How do I know when my Pesto Roasted Potatoes are done?

If you are quartering your petite red potatoes, they should be perfect after 30 minutes in the oven.

The best way to check the potatoes is by poking one with a fork. The fork should glide right through the potato with very little resistance. If you want to be extra sure that they are ready, pull a potato out and let it cool for a minute or two before you do a quick taste test.
